ਸਿਟਰਿਕ ਤੇਜ਼ਾਬ (ਅੰਗਰੇਜ਼ੀ: Citric acid) ਇੱਕ ਕਮਜ਼ੋਰ ਕਾਰਬਨਿਕ ਤੇਜ਼ਾਬ ਹੈ। ਨੀਂਬੂ, ਸੰਤਰੇ ਅਤੇ ਅਨੇਕ ਖੱਟੇ ਫਲਾਂ ਵਿੱਚ ਸਿਟਰਿਕ ਤੇਜ਼ਾਬ ਅਤੇ ਇਸਦੇ ਲਵਣ ਪਾਏ ਜਾਂਦੇ ਹਨ। ਜੈਵਿਕ ਪਦਾਰਥਾਂ ਵਿੱਚ ਵੀ ਬੜੀ ਘੱਟ ਮਾਤਰਾ ਵਿੱਚ ਇਹ ਪਾਇਆ ਜਾਂਦਾ ਹੈ। ਨੀਂਬੂ ਦੇ ਰਸ ਤੋਂ ਇਹ ਤਿਆਰ ਹੁੰਦਾ ਹੈ। ਨੀਂਬੂ ਦੇ ਰਸ ਵਿੱਚ 6 ਤੋਂ 7 ਫ਼ੀਸਦੀ ਤੱਕ ਸਿਟਰਿਕ ਤੇਜ਼ਾਬ ਰਹਿੰਦਾ ਹੈ। ਨੀਂਬੂ ਦੇ ਰਸ ਨੂੰ ਚੂਨੇਦੇ ਦੁੱਧ ਵਿੱਚ ਮਿਲਾਉਣ ਨਾਲ ਨਾਮ ਕੈਲਸ਼ੀਅਮ ਸਿਟਰੇਟ ਦਾ ਅਵਕਸ਼ੇਪ ਪ੍ਰਾਪਤ ਹੁੰਦਾ ਹੈ। ਅਵਕਸ਼ੇਪ ਨੂੰ ਹਲਕੇ ਸਲਫਿਊਰਿਕ ਤੇਜ਼ਾਬ ਦੇ ਨਾਲ ਮਿਲਾਉਣਾ ਨਾਲ ਸਿਟਰਿਕ ਤੇਜ਼ਾਬ ਮੁਕਤ ਹੁੰਦਾ ਹੈ। ਇਸਦੇ ਘੋਲ ਦੇ ਵਾਸ਼ਪੀਕਰਨ ਨਾਲ ਤੇਜ਼ਾਬ ਦੇ ਕ੍ਰਿਸਟਲ ਪ੍ਰਾਪਤ ਹੁੰਦੇ ਹਨ ਜਿਨ੍ਹਾਂ ਵਿੱਚ ਪਾਣੀ ਦਾ ਇੱਕ ਸੂਖਮ ਹੁੰਦਾ ਹੈ। ਸ਼ਰਕਰਾ ਦੇ ਕਿੰਵਨ ਨਾਲ ਵੀ ਸਿਟਰਿਕ ਤੇਜ਼ਾਬ ਪ੍ਰਾਪਤ ਹੁੰਦਾ ਹੈ। ਰਸਾਇਣ ਪ੍ਰਯੋਗਸ਼ਾਲਾ ਵਿੱਚ ਸਿਟਰਿਕ ਤੇਜ਼ਾਬ ਦਾ ਸੰਸ਼ਲੇਸ਼ਣ ਵੀ ਹੋਇਆ ਹੈ।
