Our customers’ fascination with spicy margaritas (hello, the picante!) was the inspiration for this, though we’ve made it a bit more accessible by adding the floral sweetness of lychee. Outside our range of classic margaritas, this has become our most popular drink and is a particular favourite out on the terraces when the sun finally shines.
Lychilli margarita
Serves 1
35ml blanco tequila – we use Olmeca Silver
50ml lychee juice
15ml fresh lime juice
10ml standard sugar syrup
Tabasco, to taste
1 slice or strip fresh red chilli, to garnish
1 lychee, peeled, to garnish
Put the tequila, lychee juice, lime juice and syrup in a shaker filled with ice, add a healthy drop of Tabasco and shake hard. Double strain into a coupe, garnish with the chilli and lychee, and serve.
