• 2 oz blended whisky
  • 1/2 oz honey syrup (3:1)
  • 1/4 oz ginger syrup
  • 3/4 oz lemon juice

Shake everything with ice and serve.

First time trying the Penicillin, it turned out really good! I didn’t have any Islay scotch to add on top, but I’ll buy some soon to try it. My ginger syrup was quite strong, so it overpowered the honey syrup a bit. I might try with less next time!

    Try that if you can, I think the little bit of smoky whisky is what makes the drink truly shine.

      I know it’s not by the book, but I just muddle some fresh ginger slices and add simple syrup. Learned that from Anders’ version on Youtube.

        I’ve typically made a combined honey ginger syrup and it’s not quite spicy enough. Muddled ginger in the cocktail has helped. Was interested in different options.

      I do equal parts (by weight) diced ginger, boiling water, and sugar. Add everything in a blender, blend until the ginger is fully shredded (only takes 1-2 minutes, but it might depend on the blender). I then let it rest for maybe 10 minutes, and strain it to only keep the liquid.

      I have seen this method online somewhere, and it does give a really intense ginger taste!
