Lakto-N-biozidaza (EC 3.2.1.140, Lacto-N-biosidase) je enzim sa sistematskim imenom oligosaharid lakto-N-biozilhidrolaza.[1][2] Ovaj enzim katalizuje sledeću hemijsku reakciju
- (1) beta-D-GaL-(1->3)-beta-D-GlcNAc-(1->3)-beta-D-GaL-(1->4)-D-Glc + H2O beta-D-GaL-(1->3)-D-GlcNAc + beta-D-GaL-(1->4)-D-Glc
- (2) lakto-N-tetraoza + H2O lakto-N-bioza + laktoza
Enzim iz Streptomyces specifično hidrolizuje terminalne lakto-N-biozilne ostatake (beta-D-Gal-(1->3)-D-GlcNAc) iz neredukujućeg kraja oligosaharida sa strukturom beta-D-Gal-(1->3)-beta-D-GlcNAc-(1->3)-beta-D-Gal-(1->R).
