I am looking at getting a fractal desigm north xl second hand, I presume there is no danger in that other than standard non new concerns.
Are case models universal or will I need a specific motherboard and then specific cpu/gpu etc.?

For air cooling the cpu the thermalright phantom spirit 120 or a noctua dh-15 g2 should both do the trick. I’m not experienced with water cooling.

Did some checking and my favourite shop recommends 800W PSU for the 7900 XTX 24 GB GPU so I switched yours out for a Seasonic 1000W - https://hwbusters.com/psus/seasonic-focus-gx-1000-atx-3-2024-psu-review/
Seems to be other PSUs with better score according to my link, feel free to read and switch.

I found out Thermalright has released a better CPU cooler this year so I added that one to your build.
This is the Noctua I mentioned, but I believe the Thermalright I added is very close to Noctuas best air cooler at half the price.

I also downgraded your M.2 speed to PCIe Gen4 but made it a single one and larger. To avoid any mess between PCIe slots and M.2 slots I recommend using the PCI_E1 slot and M.2_4 slot

PC cases have sizing standards in regards to the motherboard. Most cases fit ATX. Looking at your parts list you chose an ATX motherboard and a case that allows ATX boards. Well done! :)
What CPU fits into your system is based on your motherboard socket. The only thing to keep in mind when it comes to fitting parts are the dimensions of your CPU cooler & GPU respectively.
Since your case is listed with 503 mm x 240 mm x 509 mm the cooler might come up a little snug, but your parts should fit.
And yeah, it should be totally fine getting a case second hand. There isn’t much that can break, since it’s basically just a metal box :)

I am doing a linux build thus the AMD build. A guy at work has said Nvidia are the only option in trms of high end, it doesnt appear that clear cut to me for my use case - am I cutting my self short with te AMD?
My last 2 cards have been AMD. The only big loss you will see is with games that use raytracing. I saved some money and went mid to higher end AMD and love the card. It handles everything i throw at it, and if the game features raytracing, I either set to very low or turn it off. It doesn’t really matter much to me. Seriously, everything else I have thrown at it runs incredible even at 4k for most games.
I am on linux with AMD, too. but I used my old GTX1060 for a while and in my experience it depends on use case, distro and budget. So what are you going to use the system for?
Gaming, I want to move from console gaming. I will also use it for streaming movies and such but anything that is gaming capable will handle plex or jellyfin.
I am looking at bazzite I think, I am about to try it out moving from mint.
Budgetwise it is all top tier at the minute and aim toward it over time, there are bits I can pick up like SSDs and memory and the case and then get the most suitable cpu gpu when the time comes to commit.
Then I see no issues with an AMD Card. There are some edge cases I know about where nVidia seems more suitable due to their drivers/software support. But to be honest, I don’t do high end gaming, so there could be things that nVidia generally does better than AMD, independently from linux.
