Racuchy
Racuchy are traditional Polish dish, which derives from the same family that crêpe, but in fact, remind more American pancakes.
It is made from some flour, milk, eggs, sugar and a pinch of salt. It is also absolutely necessary to use yeast or, in other versions, baking powder or baking soda. They are fried in oil on the pan.
Racuchy can be eaten plain, sprinkled with suger or powdered sugar. In alternative version some cream or sour cream can be used. But the most popular version is one with frying them stuffed with slices of apple and served with suger. Sometimes, in more modern versions, other fruits can be used, like bananas.
In some regions they are prepared more savoury and served with fish or mushroom soup, during the Christmas Eve dinner.
In Poland racuchy are usually eaten as dinner, snack or supper.
