ROLE OF DIET IN DENTAL

CARIES

HOPEWOOD HOUSE STUDY
• Study was done by Sullivan and harris
• 80 children aged 3-14 years
• Diet was basic vegetarian
• Absence of sugar in diet
• Fluoride content was insignificant
• Result –
• At end of 10 year period, 13 year old children mean DMFT was 1.6 compared to the
general child population that was 10.6

• Study indicated that dental caries can be reduced by a Spartan diet without
influence of fluoride and presence of unfavourable hygiene
VIPEHOLM STUDY
• Study was done by Gustaffson
• Purpose of study –
• To determine effects of carbohydrates on increase of caries
• To determine effects of frequency and quantity of sugar intake on
caries formation

• 436 patients
• Study period 5 years
• 1 control group and 6 experimental groups
VIPEHOLM STUDY
• SUCROSE GROUP, BREAD GROUP ,CARAMEL GROUP, 24 TOFFE, 8
TOFFE, CHOCHOLATE GROUP
• CONCLUSION –
• Increased carbohydrate intake increases caries formation
• Consumption of sugar between meals increased caries
TURKU SUGAR STUDY
• It was done by Scheinin and makenin
• Purpose of study – comparision of cariogenicity of sucrose, fructose
and xylitol
• 125 subjects
• Conclusion –
• After 1 year – sucrose and fructose had same level of cariogenecity
• After 2 years – increased cariogenecity in sucrose group and
cariogenecity remained unchanged in fructose group
• Study showed that sucrose was more cariogenic that fructose
Role of Carbohydrates in DC
ROLE OF CARBOHYDRATES IN DC
• Daily requirement 300-500mg/day
• Functions –
• Primary function to provide source of energy from breakdown of
carbohydrates
• Heart muscles derive energy through glycogen stores
• Brain and nervous tissues utilize glucose for the various bodily
mechanisms
SUGAR SUBSTITUES
• SWEETENERS

• 1 LOW CALORIC SWEETENER – aspartame,saccharin

• 2 CALORIC SWEETENER – xylitol, sorbitol,mannitol

• 3 PLANT DERIVED SWEETENERS – licorice


Role of Proteins
• Complex nitrogenous compounds containing carbon,hydrogen and oxygen
• RDA – 40-65gm/day
• Animal Sources – fish, eggs ,meat,cheese
• Plant sources – lentil, pulses beans , nuts

• Functions –
• Required for formation of digestive enzymes, hormones
• Tissues formation
• Body building nutrient
Protein and DC
• Kwashiorkor patients showed delayed eruption and dental hypoplasia
• Addition of casein to diet showed reduced caries
• Lysine-glucine prevent dental caries
• Precursor protein was found high in saliva collected from caries free
indivisuals
FATS
• Fats yield fatty acids and glycerol on hydrolysis
• Sources – ghee, butter, milk, cheese, egg

• William et al showed that certain fatty acids showed antimicrobial


action
• Oleic fatty acid showed bactericidal activity
Minerals
Sodium ,Calcium ,Magnesium,Potassium,Phosphorous

RDA OF CALCIUM – 500-100mg/day


RDA OF PHOSPHOROUS 500-1000mg/day
RDA OF SODIUM – 10-15g/day

• Step 1 – to ascertain daily average intake
• Step 2 – circle food which has been sweetened with sugar
• Step 3 – food list which contains nutrients essential for oral health
• Step 4 – list sweets and sugar sweetened foods
• Step 5 – put all lists together
