INTRODUCTION

Soybean (Glycine Max) crop is considered

to be the main source of oil globally, and
is important due to its nutritional value
and Commercial importance.
Cultivation of Soybean was originated in
Asia about 5000 years ago. Firs in China
and then followed by Japan.
It was brought to Europe in the 18th
century then to the United States in the
19th Century. Since it is an excellent
source of vegetable and proteins, thus
has become an economically important
crop worldwide.

SOYBEAN
 The Soybean (Glycine max (L) Merill family
legummosae) undoubtedly originated in the
orient, probably China (Synder, 2016). In the
Orient, the main products from soybeans are
oil and meal alongside a fascinating variety
of non-fermented and soy pods.
 Although soybeans as served as food by the
orient over the centuries, the amount used
currently are not as great as one might
expect, as even China, the home of the
Soybean (SB) imports to meets its demand.
In China, annual consumption is reported to
be 15-20kg Person in all form (Wang, 2002).

TIGER NUT
Tiger nut (Cyperus esculentus) is an
underutilized tuber of family
cyperaceae, which produces from the
base of the tuber that is some-what
spherical. Tigernut tuber appear
somewhat long or range round in
shape with a dimension of 8mm to
16mm, smaller size however, are not
use for human consumption, when
hydrated, it is slightly harder (nut
fexture), but with a rather more
NUTRITIONAL VALUE OF SOYBEANS

 Soybeans are good sources of

Protein, Lipids, and other nutrients.
Soybean protein products can be
good substitutes for animal products
because unlike some other beans,
soy offers a “complete” protein
profile.
 Soy protein products can replace
animal based foods which also have
complete protein, but tend to contain
more fat, especially saturated fat,
without requiring major adjustment
HEALTH BENEFITS OF SOYBEANS

Alleviation of Menopause
Symptoms Menopause is the period in
a woman’s life when menstruation
stops. It is often associated with

reduction in estrogen levels.
Reduce Bone Problem: Soybean
contain plant compounds that may
help prevent breast and prostrate
cancer. What’s more, these legumes

now widely consumed and are readily used in
the production of soymilk, soy cake, / soy
yogurt and the fortification of local
carbohydrate.
• Chemical Use of Soybean: High oleic
soybean oil can be used to create high-
performing sustainable synthetic motor oil.

Medicinal Use of Tiger Nut: Tiger nut
has also been reported to be used in the
treatment of flatulence, indigestion,
diarrhea, dysentery and excessive fart.
