Summary Eco-enzymes or Garbage enzymes have emerged as a solution to managing organic
wastes. These organic wastes containing carbon compounds are discharged from
houses that ultimately end up in landfills. Eco-enzymes or Garbage enzymes are
mainly concerned with the enzymes produced from the anaerobic fermentation of
fresh vegetables or fruit wastes. The longer the fermentation period, the better its
efficiency. This review is carried out with the intention of bringing forth all the
enzymes isolated so far from household organic wastes and their various applications,
including the microorganisms involved in the process. Production of Ecoenzymes or
Garbage enzymes is very straightforward. It requires fresh vegetable and/or fruit
wastes, a sugar source in the form of jaggery, molasses or brown sugar, water, and
airtight plastic containers. These are mixed in a 3:1:10 ratio respectively and kept for
three months, whereby through anaerobic fermentation, the wastes get converted to
enzymes. After three months, this organic liquid loaded with hydrolytic enzymes can
be used in a wide variety of ways

Summary Enzymes from microbial sources are preferred compared to plant or animal sources because of
its being relatively cheaper and controllable (Singh et at.,201,6).The enzyme production cost
can further be reduced i-f negative value or cheap value substrates such as fruit processing
industry waste are used. This will also help in solving fruit indusfry waste problem to some
extent and will reduce the pollution levels. Lactic acid bacteria are the most prominent probiotic
bacteria which exert beneficial effects in the hosi gastro intestinal tract in addition to production
of enzymes. Tevea et a1.,2016 reporled higtrly thermostable 6-amylase enzyme from
Lsctobacillus fermentum 04BBA19. Keeping in view the objective of making the best use, the
different fruit and vegetable wastes were evaluated for production of cellulases, pectinases and
amylase dnzymes using lactic acid bacteria. Fruit and vegetable wastes are rich source of
carbohydrates, proteins, vitamins and minerals (Coman ef a1.,2019). These may be used as
substrates for various value added products including biofuef photochemicals, en-4{nes etc.
Latter are proteins, which act as catalysts and lower the energy required for a reaction to occur
without being used up in the reaction. Many industries utilize enzymes to save enerry, chemicals
and/or water compared to conventional processes in the generation of their products.

Summary Enzymes hold a great importance in various industries and perform a plethora of
applications ranging from food to bioenergy sectors. Enzymes act as the biocatalysts
in various biotechnological processes. The in-silico approaches have advanced in the
recent times leading to the prediction of novel enzymes. These uncharacterized novel
enzymes are being helpful in the understanding of various unsolved metabolic
processes and provide a deeper cognizance in the use of these novel enzymes in
various industries. There exist various databases and in-silico techniques such as
multiple sequence alignment, molecular dynamic simulation, molecular docking, and
Genome-scale modeling for the prediction of novel enzymes. These techniques and
databases work in coalescence for the quest for novel enzymes and further help in
developing newer approaches and algorithms for the discovery of the robust enzymes
of the potential applications. The present chapter discusses the recent strategies used
in computational searching of gene/protein databases to find novel enzymes.

Summary Eco-enzyme is a type of natural compound that can be extracted normally from
citrus fruit peels or waste and various other sources. It is a complex solution
produced by the fermentation fresh kitchen waste such as vegetable and fruit peels. It
is a type of vinegar made by fermenting food waste with sugar to form alcohol. Eco-
enzyme is fermented solution made from a mixture of sugar, fruit peels, and water
mostly in a ratio of 1:3:10. This review, in particular, focuses on the citrus Eco-
enzyme as citrus fruit extracts and citrus flavonoids have the potential to possess
promising biological characteristics due to their phenolic profile and antioxidant
properties. Numerous innovative techniques used to produce eco-enzymes using
different raw materials have been discussed in detail. Such techniques are cost-
effective, eco-friendly, and possess multipurpose applications. The production of eco-
enzyme not only lessens the compilation of organic waste but also provides a
substitute for synthetic chemicals that are harmful to both human health and the
environment. However, the major applications, including cleaning floors, utensils,
gardening, and other innovative techniques of recycling and reusing natural trash that
will assist in reducing fruit waste, have been explored in the present review.
