Introduction
• Every year, food borne illnesses cause 600 million cases, 420,000
deaths, 33 million DALYs annually. (WHO, 2015)
• Food quality declines with unidentified substances or toxic
containers.
• Contamination in food can occur at any point along the chain-
during production, processing, distribution, or preparation.

• Intelligence: It involves knowledge acquisition,


application, deductive reasoning, creativity,
and goal achievement.

• “The science and engineering of making


intelligent machines, especially intelligent
computer programs”.

• AI methods are utilized in various industries,


including gaming, weather forecasting etc.

• Also to meet food demand, AI has been used in supply chain
management, food sorting, production development, food
quality enhancement, and adequate industrial hygiene.
• AI employed to increase productivity while decreasing
expenses, improving responsible production and consumption.

• The seminar topic "AI in food processing industries" is
chosen to explore how artificial intelligence revolutionizes
food production, enhancing efficiency, quality, and safety.

• Exploring AI's transformative impact on modernizing food


processing: enhancing efficiency by automating sorting,
predictive maintenance, quality control, and innovation,
while addressing challenges in automation, safety, and
sustainability simultaneously.

E-nose system

• Electronic nose also known as E-nose is an instrument


created to sense odors or flavors in analogy to the human
nose.
• It consists of an array of electronic chemical sensors where it
is able to recognize both simple and complex odors.
• E-nose has been widely used to aid in both quality control and
assurance in the food industries.

E-tongue system

• Electronic tongue (E-tongue) is an instrument that is able


to determine and analyze taste.
• The ability to sense any taste like a human olfactory
system makes it one of the important devices in the food
industry, especially for quality control and assurance of
food and beverages .
• In addition, E-tongue has been used to identify the aging
of flavor in beverages , identify the umami taste in the
mushrooms , and assess the bitterness of drinks or
dissolved compounds.

Future of AI
• AI in the food industry should ideally complement human
expertise rather than replace it. Finding the right balance
between automation and human control is crucial for
maintaining quality and safety standards.

• Despite these challenges, the potential benefits of AI in


the food industry, such as improved efficiency, quality
control, and better consumer experiences, make it worth
addressing those listed challenges and finding innovative
solutions to overcome them. Looking at these points,
future do seem on the positive side.

Conclusion:

• AI is an extremely powerful tool


which is going to have significant
impact on modern society.

• AI is becoming vital in food processing industries due to


it’s capability to escalate hygiene, food protection,
transparency in supply chain and management, and
waste management system, predict potential market for
products, thus managing cost and increase in revenue.
