A watched pot never boils….. Or
does it?

Why do you think it feels like it


takes forever to boil a kettle but it
doesn’t take long for the ice
cubes in your drink to melt?

This is due to the energy changes
going on inside of the substance -
it doesn’t take a lot of heat
energy to melt an ice cube but it
takes a lot of energy to boil water
- this is explained by ‘latent heat’

• Last lesson you looked at specific heat capacity - the amount of
energy needed to raise 1kg of a substances temperature by 1
degree - this does not deal with change of state!

• When a change of state occurs, the energy supplied changes the


energy stored (internal energy), but not the temperature.

• When a substance changes state, energy is used to
break the bonds or given out as the bonds reform.

• When something cools down , heat energy is released


from it.

• When a substances condenses or freezes, the


temperature stays constant because the heat energy is
transferred to form bonds between the particles.

Using your numbers from the last question, describe the


difference in energy required to melt ice and boil water

Why is there such a big difference in this energy?


Energy to melt ice is 850,000J whereas energy to
boil same mass of water is much higher, at
5,650,000J

The difference is down to the need to separate


the particles so a gas can form – breaking the
bonds requires a lot of energy.

• Looking at this graph can you suggest why the temperature does
not change whilst the substance is melting and boiling?
• Why is the flat section for boiling so much longer than melting?
Application
• A substance must absorb heat energy so that it can melt or boil. The
temperature of the substance does not change during melting, boiling
or freezing, even though energy is still being transferred. This is when
bonds are being broken by the energy that is being put into the
system.
• The temperature remains the same for longer when boiling as the
latent heat for vaporisation is so much higher - it takes longer for
enough energy to be put into the system for a substance to boil than
it does to melt.
