INTRODUCTION

India is the largest producer ,consumer and exporter of spices


followed by China.
There are 109 spices all over the world from which 52 of them
belongs to India.
Hence India is known as the “Land of Spices” or “Home of
Spices”.
There are many spices and condiments Industries working for
the advanced processing and the betterment of spices all over
the world.
This article vividly explains about the spices and condiments
Industries.
SPICES AND CONDIMENTS

Spices are dried seeds ,root , bark or other vegetable


matter , used to add flavor and color to a dish .Spices are
added in small quantities to get aroma. Eg : Black pepper.
Condiments are added to a dish to add or complement its
flavor .They are often prepared mixes(like mustard or soy
sauce),although the broad definition can include spices.
Condiments are mostly added in larger quantities to get
taste . Eg : Coriander seeds.

* These spices and condiments have a great


economic and medicinal use for that they are transported
to the industries .
India -The largest exporter of spices and condiments

India primarily exports pepper, chilli, turmeric, ginger, cardamom, coriander,


cumin, fennel, fenugreek, celery, nutmeg and mace garlic, tamarind and vanilla.
Processed Spices such as Spice Oils, Oleoresins, mint products, Spice Powders ,
Blends and Seasonings are also exported.
India is the World’s largest producer ,consumer and Exporter of Spices ; The
country produces about 52 0f the 109 varieties listed by the International
Organization for Standardization (ISO) and accounts for half of the global trading
in Spices.
Almost all the states in India grow one or more Spices.
The major Spice producing States in India are Andhra Pradesh , Kerala, Gujarat,
Rajasthan, Maharashtra, West Bengal ,Karnataka, Tamil Nadu, Orissa and
Madhya Pradesh, N.E Region and Andaman & Nicobar Islands etc.,
The area covered under Spices in the country is estimated to be 3.10 Mha with an
annual production of 5.81 Million Metric tones.

An overview of the Spices & Condiments Industry!

Spices and Condiments Industries release various processed products such as


Oleoresin, spice powders and oils, Spice blends which is useful for various
medicinal purposes.
There are certain agencies which are working for the Development of Spices
Industry.
The Spices Board is the main agency working for the betterment of Spices
Industry.
The following are the agencies that support Spices Industry:
1.The Spices Board, Cochin, Kerala.
2.World Spice Organization , Kaloor, Kerala.
3.The Spices Park, Puttady ,Kerala.
4.Directorate of Arecanut and Spices Development, Kozhikode, Kerala.
THE SPICES BOARD

Spices Board, India under the Ministry of Commerce and


Industry, is the apex organization for promoting Indian Spices
and Spices Products worldwide.
The Board was constituted on 26th February, 1987 as per Spices
Board Act,1986 by merging the erstwhile Cardamom Board
and Spices export Promotion Council.

The mandate is mainly export development & promotion of


scheduled spices & their processed forms
THE SPICES BOARD

It is the flagship organization for the development and


worldwide promotion of Indian Spices.
The Board is an International link between the Indian exporters
and the importers abroad.
The Board has been spearheading activities for excellence of
Indian Spices, involving every segment of the Industry.
The present chairman of the Spices Board is Subash Vasu.
There are also regional laboratories at Mumbai, Chennai,
Delhi, Tuticorin, Kandla and Guntur.
 Through the laboratories, the Spices Board makes mandatory
quality checks for Spices exported from India.
WORLD SPICE ORGANIZATION(WSO)

Another Development for Spices Industry is the formation


of WSO.
 WSO is a common platform for all the stake holders of
the Spice Industry viz., Farmers, Processors, academia,
and the end-users to come together and work for its
sustainable development.
SPICE PARKS

Recently, Government of India


has established 10 spice parks
for major spices in the hot spice
growing area which function as a fulcrum for development of Spice Industries.
The basic concept of such park is to provide common infrastructure facilities
for both post harvest and processing operations which also aims to backward
integration by providing rural employment.
These parks have processing facilities at par with International standard in
which the produce could undergo cleaning, Grading, Grinding and Packing
etc.,
It also provides the educative service to all the farming and trading
communities about Good Agricultural Practices(GAP) to obtain quality
standards prescribed by the importing countries.
DIRECTORATE OF ARECANUT AND SPICES DEVELOPMENT

This Directorate functioning under the Ministry of Agriculture,


GOI is responsible for co-ordinating and monitoring the
activities on development of Spices including aromatic plants.
It supplements the developmental efforts of the state govt. by
making available the nucleus planting material of various
HYV(High Yielding Varieties) of spices and aromatic plants
across the country, through a Centralized nursery programme
at major centres of Cultivation.
It also disseminates periodically the seasonal crop plants , area
coverage, price trend etc., for the use in the planning process.
Value added products from Spices and Condiments Industries

OLEORESIN:
 Oleoresin is made of two components: volatile oil and
resin.
 The former represents the aroma, while the resin
is made up of nonvolatile matter such as color, fat,
pungent constituents, and waxes.
 Volatile oil is obtained by steam or hydro distillation,
whereas resin is obtained by solvent extraction.

Spice Oils

Spice oil is a spice derivative that are extracted generally


by steam distillation process.
 The spice oils distilled off from the spices at the initial
stage before subject to solvent extraction.
 These oils are the volatile components present in
spices and provide the aroma and flavor of the spice they
are made from.
Benefits Of Spice Oils

Spice oils are used for the preparation of Soft beverages. Foe Example : Ginger Oil
in the preparation of Ginger beer.
The use of Spice Oils in the preparation of Creams, Soaps, shampoos, Lacquers,
lipsticks, etc., is well known.
However , Some of the materials available from India are not yet widely used , nor
are they recognized as providing a new dimension to the cosmetic products.
In cleansing materials ,detergents etc., Spice Oils provide the aromatic appeal in
otherwise uninteresting sometimes offensive notes associated with some of the
base products.
Products like toothpastes and mouthwashes depend on essential oils to provide
their pleasing flavor, making them not only acceptable, but pleasant to use.
The use of spice extracts in cake fillings , biscuits, and snack products is also
steadily increasing.
Spice oils has significance in processed cheeses and savoury spreads.
