BASICS OF COFFEE

Coffee

 Is a widely consumed non
alcoholic beverages prepared
from the roasted seeds
commonly called the beans of
the coffee plant.
HISTORY

 Circa A.D 800 – Goats will eat anything.
Kaldi – legendary Ethiopian goatherd.
 Herd – group of animals
Cherry red berries that contains beans

From Ethiopia, it spread to Egypt and Yemen,


and by the 15 century had reached Persia,
Turkey, and Northern Africa.
HISTORY

1453 – Coffee was introduced to
Constantinople by Ottoman Turks.
 1475 – The first coffee shop opened, the
Kiva Han.
 1600- 1607 – Coffee introduced to North
America by Captain John Smith
 1642 – The first European Coffee house
opened in Italy.
HISTORY

 1652 – First coffee house opened in
England.
 1657 – France
 1668 – Coffee replaced beer as New York
City’s favorite breakfast drink.
 Early 1900’s – In Germany, afternoon
coffee become standard occasion.
HISTORY

 1900 – Begin packing of roast coffee in
vacuum tins.
 1901 – Instant coffee was invented by
Japanese American chemist Satori Kato.
 1907 – Brazil accounted for 97% of the
world’s harvest.
 1946 – In Italy, perfected his espresso
machine.

Varieties of Coffee

Four Varieties of Coffee:

R = Robusta
E = Excelsa
A = Arabica
L = Liberica
Robusta
(coffee canophora)

Grows:
- in lower altitudes of about 300-500 meters
above sea level.
*Cavite *Batangas

- in lower elevations
*Kalinga *Bulacan *Visayas
Robusta
(coffee canophora)

It is used mostly in specialty
blends because of its strong
character and higher caffeine
content.
Excelsa
(coffee excelsa)

Also grows in lower elevations - Cavite

It has a distinct “langka” or jackfruit taste


Arabica
(coffea arabica)

Grows in higher elevations about 1,500
meters above sea level.
*Cordilleras

It is the most traded coffee variety.

- Smoother flavor
- Dark green pointed leaves and
oval fruits.
Liberica
(coffea liberica)

- Barako
- Has biggest trunks, leaf size,
beans and cherries.
- Originally grown in Lipa,
Batangas.

 Espresso + whipped cream = Espresso con Pana
 Espresso + steamed milk = Flat white
 Espresso + steamed half and half + steamed milk = Café
