CARBONATED DRINKS

Methods of manufacturing of
different types of carbonated drinks

What are carbonated beverages?
Carbonated beverages are drinks that have had carbon dioxide added
to them.

• To create the pleasant bubbly sensation. Carbon dioxide mixes with water,

it forms carbonic acid:

CO2 + H2O = H2CO3

• It’s this acid that creates the tingling on your tongue.

Different These beverages include:
• Carbonated soft drinks
types of • Carbonated water
• Energy Drinks

• Sparkling wine & champagne
beverages
Carbonated beverage generally
indicates a non-alcoholic beverage

• Carbonated beverages
contain:
• water  90% water & up
to 99% for diet beverages
• Sugar/sweetener 
syrups
• Carbon dioxide 
colorless and flavorless
• Acids
• Flavoring
• Colors

According to the Codex Standard for Natural
Mineral Waters 108–1981, there are different
denominations for carbonated waters
according to their carbonation source:
i. Naturally The gas in the water comes from the
same source as the natural mineral water,
carbonated and there is no loss or additional gas after
packaging than the original content
natural mineral obtained from the source
water
ii. Natural The bottled natural mineral water had a
mineral water greater amount of gas than that obtained
from the original source; however, the
fortified with additional CO2 comes from the same
source as the water;
CO2 from the
source
iii. Carbonated The bottled natural mineral water is
natural mineral carbonated by adding CO2 from a
different source than the water.

Beer

Beer is the most ancient

alcoholic fermented beverage,
whose origins may trace back to
10,000 B.C. in the Neolithic era
Beer main ingredients

• Barley
• Cereal Adjuncts
• Water
• Hops
• Yeast

Sparkling Wine
• 6 major methods
• each resulting in a different carbonation
level
• different style of bubbly!
• Traditional Method  Champagne
• Tank Method/Charmat  Prosecco
• Transfer Method
• Ancestral Method
• Continuous Method
• Carbonation
