Milk is atomized into spray droplets using a pressure nozzle, centrifugal disc, or rotary wheel atomizer. These droplets are exposed to hot air in a drying chamber at temperatures between 180-220°C, where the water evaporates from the droplet surfaces leaving behind milk powder particles between 10-50 micrometers in size. The milk powder particles are then recovered from the exhaust gases using cyclones or bag filters.
