Purchasing and Cost Controls

Assignment #2 – Menu Engineering.

DUE DATE: The week of December 11th by the start of class.

This assignment has two key components.

• Component one is building the cost chart based on information given.


o Filling out the food cost percentage column and the contribution to margin column.
o The chart on blackboard.
• Component 2 is building a menu engineering graph with all 4 quadrants, all items listed, vertical
and horizontal axis with labels and plotting each item from the chart correctly.
o Stars, Plowhorses, Puzzles and Dogs are the four quadrants.

MARKING:

• 15% for grammar, spelling, format, etc.


• No page numbers required.
• You should have a title page, executive summary, the completed chart and the
completed graph (with all 4 quadrants).
• 60% for content.
• All calculations are correct.
• All items are placed correctly on the graph.
• The intersection lines are correct.
• All items are identified clearly by a spot on the graph and a name beside each point.
• Both axis’ are well identified with appropriate intervals.
• The chart is easy to read including all items.
• 15% for analysis.
• Choose 5 items for the chart and develop a strategy for each.
• Make sure it is clear why you are performing the strategy and the expectations
of results.
• 10% for WOW factor.
• Is there anything special about it?
• Does it stand out from the other groups?
