A Variety of Meat Loaf Recipes

The delicious meat loaf is not made of ground beef alone. This dish can be as yummy with ground pork, ground ham, ground chicken, ground turkey, and salmon flakes. Give this classic dish an interesting twist. Choose one meatloaf recipe to cook from this collection.

Sweet and Sour Meatloaf


Kids will love the sweet flavor of this meatloaf. Ready in 1 hour and 10 minutes. Yields 6 servings. Ingredients:

1 pounds of ground beef 1 cup of dry bread crumbs 1 teaspoon of iodized salt, or to taste teaspoon of ground black pepper, or to taste 2 whole eggs 1 teaspoon of dried onion, minced 1 can of tomato sauce (15 ounce weight), divided into 2 parts 2 tablespoons of brown sugar, or to taste 2 tablespoons of cider vinegar, or to taste cup of white sugar, or to taste 2 teaspoons of prepared mustard

Procedure:

Preheat oven to 350 degrees. In a large bowl, mix together the ground beef, bread crumbs, salt, ground black pepper, eggs, onion flakes and can of tomato sauce. Blend well. Put meatloaf mixture into a lightly-greased 5 x 9 loaf pan. Shape the loaf with allowance for the sauce around the edges. Bake at 350 degrees for 40 minutes. In a non-stick saucepan over medium heat, mix together the can tomato sauce, brown sugar, vinegar, white sugar, and mustard. Boil and stir until sugar is completely dissolved. Remove from heat and set aside. Take out meatloaf from oven after 40 minutes. Pour sauce over the top of meatloaf. Return to oven and bake at 350 degrees for another 20 minutes. Cool for 5 minutes before removing meatloaf from baking pan

Mozzarella Meat Twirl

Kids will surely love the cheesy tang in this meatloaf. The twirls in each meatloaf slice will provide good presentation and more flavor. Ready in 1 hour and 30 minutes. Yields 4 servings. Ingredients:

1 pounds of ground beef cup of soft bread crumbs 1 whole egg, lightly beaten 1 tablespoon of dry mustard, or to taste 1 tablespoon of salt, or to taste 1/8 teaspoon of ground black pepper, or to taste 1 package mozzarella cheese, sliced (6 ounce weight) cup of ketchup cup of water 1 tablespoon of Worcestershire sauce

Procedure: 1. Preheat oven to 375 degrees. 2. In a large bowl, mix together ground beef, bread crumbs, egg, mustard, salt and pepper. Blend very well. 3. On a waxed paper, spread meatloaf mixture into a flat rectangle. Arrange the slices of cheese all over the surface. 4. Start on one edge of the short side of rectangle. Carefully roll the flat meatloaf, not including the waxed paper. Place meatloaf roll in a baking dish. 5. In another bowl, combine ketchup, water, and Worcestershire sauce. Pour over meatloaf. 6. Bake in oven for 1 hour and 10 minutes. 7. Cool for 5 to 10 minutes before serving.

Cheesy Meatloaf (from Allrecipes)

Cheesy Meatloaf

A jazzy meatloaf stuffed' with a delicious surprise. Ready in 1 hour and 15 minutes. Yields 8 servings. Ingredients:

1 pound of ground beef 1 pound of ground pork 1 envelope of dry onion soup mix (1 ounce weight) 2 whole eggs, beaten 1 cups of dry bread crumbs Ground black pepper, to taste cup of water 2 cups of shredded mozzarella cheese, separate cup

Procedure: 1. Preheat oven to 350 degrees. 2. In a large bowl, mix well together the ground beef, ground pork, soup mix, eggs, bread crumbs, pepper and water. 3. Stir in cup of cheese to meat mixture. Blend well. 4. Spread half of meatloaf mixture into a 5 x 9 loaf pan. Distribute the 1 cups cheese on surface. Add the remaining meatloaf mixture. 5. Bake for 60 minutes. 6. Cool for 10 to 15 minutes before serving.

Pineapple Ham Loaf (for Allrecipes) Procedure: 1. Preheat oven to 350 degrees. 2. In a large bowl, combine together eggs, milk, saltines, and ground pepper. Add the minced ham and ground pork. Mix well together all the ingredients.

3. In a shallow baking dish, form the meat mixture into a 9 x 4 inches loaf. 4. In a small bowl, mix all the ingredients for sauce. Pour over meatloaf. 5. Bake for 1 hours. Occasionally taking out meatloaf to baste the meatloaf with its drippings. 6. Cool for 5 to 10 minutes before serving.

Pineapple Ham Loaf


A meatloaf that has the savory tang of ham and a heaven-sent sauce! Ready in 1 hour and 40 minutes. Yields 6 servings. Ingredients for meatloaf:

2 whole eggs, beaten cup of milk 1 cup of saltines, finely crushed teaspoon of ground black pepper, or to taste 1 pounds of cooked ham, minced 1 pound of ground pork

Ingredients for pineapple sauce:


1 cup of packed brown sugar 1 teaspoon of prepared mustard 1/3 cup of vinegar cup of water 1 can of crushed pineapple, undrained (8 ounce weight)

You can create magic just by mixing turkey meat, cheese, and bread. Ready in 1 hour and 15 minutes. Yields 8 servings. Ingredients:

2 pounds of ground turkey 1 cup of milk 1 cup of Italian seasoned bread crumbs 2 whole eggs 1 teaspoon of salt, or to taste teaspoon of ground black pepper, or to taste pound of Colby cheese, cut into half-inch cubes cup of ketchup, or to taste (optional)

Procedure: 1. Preheat oven to 400 degrees. 2. Using your hands, mix well together turkey, milk, bread crumbs, and eggs in a large bowl. Season with salt and pepper. 3. Fold in the cheese cubes into the meatloaf mixture. Transfer to a loaf pan. Spread ketchup on top. 4. Bake for 1 hour. Cool for 5 minutes before serving.

A delectable meatloaf with a punch! Ready in 1 hour and 10 minutes. Yields 8 servings. Ingredients:

1 pound of ground chicken

2 whole eggs 1 cups of bread crumbs 3 tablespoons of salsa, or to taste 2 tablespoons of Ranch-style salad dressing 1 package of taco seasoning mix (1.25 ounce weight) cup of shredded Cheddar cheese, or as needed Sour cream (optional)

Procedure: 1. Preheat oven to 350 degrees. 2. In a large bowl, combine together the ground chicken, eggs, bread crumbs, salsa, salad dressing, and taco seasoning mix. 3. Pack into a lightly-greased 4 x 8 inches loaf pan. 4. Bake for 1 hour. Top with cheese. Serve with sour cream.

Mini Salmon Loaf (from Allrecipes) Procedure: 1. Preheat oven to 350 degrees. 2. In a Teflon pan, saut onion until soft. Add celery. 3. In a bowl, mix well together the salmon, egg, milk, bread crumbs, salt, pepper, and celery mixture. 4. Pack the mixture to a lightly-greased mini-loaf pan. Size: 5 x 3 x 2 inches. 5. Bake for 40-45 minutes. When a toothpick inserted into the center of loaf comes clean, the loaf is already cooked. 6. In a small bowl, mix well all the ingredients for sauce. Serve dill sauce with salmon loaf

Lemon Garlic Pork Roast

1 3 to 3 pound boneless pork loin roast teaspoon lemon zest (grated lemon rind) teaspoon salt teaspoon ground cumin teaspoon pepper 3 garlic cloves, minced 1 cup chicken broth Trim excess fat from pork. Stir rest of the ingredients except the chicken broth together well and rub evenly over the pork. Place pork in small roasting pan or casserole and add broth to the pan. Bake at 400 for 30 minutes. Turn pork over and bake for an additional 35 minutes or until a meat thermometer registers about 160. Serve, making pan juices into a gravy if desired.

Hawaiian Pork with Pineapple


Ingredients: 1 pound pork tenderloin, cut into thin strips 1/4 cup teriyaki sauce 1 cup water 1/2 cup pineapple chunks 2 1/2 cups pineapple juice 1 1/4 cups white rice 1 tablespoon vegetable oil 1 medium onion, chopped 1 medium red pepper, chopped 1 medium yellow pepper, chopped 1/4 cup slivered almonds Marinate pork in teriyaki sauce for several hours in refrigerator. Add pineapple juice to a saucepan and bring to a boil. Add rice and cook for about 15 minutes or until rice is tender and liquid is absorbed. In a large skillet, over medium high heat, stir fry pork in hot oil for about 5 minutes or until browned. Add onion and peppers. Stir fry for 5 minutes. Stir in pineapple chunks and almonds. Serve over rice. Serves 4

Pork Chop, Apple and Sweet Potato Casserole


1/2 cup (125 mL) all-purpose flour 3/4 teaspoon (3 mL) salt, divided 3/4 teaspoon (3 mL) freshly ground black pepper, divided 6 thick-cut boneless pork loin chops (about 1 inch/2.5 cm thick), trimmed of fat 2 tablespoons (30 mL) vegetable oil 4 sweet potatoes, peeled and sliced 1/4 inch thick 1/2 cup (125 mL) packed brown sugar 3 apples, peeled, cored and cut into 1/2-inch rings 1/2 cup (125 mL) dry white wine Preheat oven to 350F (180C). 1. In a shallow dish, combine the flour, 1/2 teaspoon (2 mL) salt and 1/2 teaspoon (2 mL) pepper. Dredge the pork chops in seasoned flour, coating evenly and shaking off excess. Discard the excess flour mixture. 2. In a large nonstick skillet, heat the oil over medium-high heat until hot. Cook pork chops, turning once, for 3 to 4 minutes per side or until browned on both sides. Transfer to a greased 13by 9-inch (33 by 23 cm) glass baking dish. 3. Layer half the sweet potatoes over the pork chops. Sprinkle with one-third of the brown sugar. Layer half the apples over the sweet potatoes. Sprinkle with another third of the brown sugar. Layer with the remaining sweet potatoes, apples and brown sugar. Pour wine over the mixture and sprinkle with the remaining salt and pepper. 4. Cover and bake in preheated oven for 1 1/4 hours or until just a hint of pink remains inside pork. Uncover and bake for 15 minutes or until apples are browned. Makes 6 servings
