Errors: One-time occurrences during the minting of a coin. They do no repeat.

Varieties: A feature of a die that reliably repeats over a number of coins.

Examples:
A 1955 doubled die cent is a variety - the doubling is on the die and
a large number of identical pieces were struck.
A cent on a dime planchet is an error - the wrong planchet got mixed
in and subsequent strikes are likely to be normal.

Sometimes classification can be difficult - the line is fuzzy.

Example:
Missing edge letter prez bux: I'd call it an error, but a large
number of identical pieces were struck. The key for me is that the
error was in the minting process of the coin and not in die
preparation. PCGS calls these "Mint Errrors".

Large/small dates result from differences in dies, and thus would be

varieties. Exactly what constitutes a large or small date depends on
what coin and year you are discussing, but in general are perceived
differences in the size of the numerals.
