Hummus Beiruti
A spicy spread originating from the Middle East, which
gets its name from the Arabic word for chickpeas. Made
from chickpeas and spices, it goes well with bread or
crudites, or as a salad accompaniment.
Tzatziki
Also known as cacık or tarator, it is a dip or sauce found
in Mediterranean cuisine, made of salted yogurt mixed
with cucumbers, garlic, olive oil, lemon juice, and herbs
such as dill, mint, parsley and thyme.
Mutabel
A staple in Middle Eastern cuisine, it is a dip made from
roasted, mashed eggplant mixed with yogurt, tahini,
garlic, lemon juice, and olive oil. The tahini adds a rich,
nutty flavor.
Keftedes
Beautifully flavored chicken meatballs that are slightly
crispy, and totally delicious. Usually served with pita
bread, olives, cucumbers, onions, and almost always,
tzatziki sauce.

Some cities even have entire bars dedicated to serving
only these savory treats, and with reason, as these
marinated fried anchovies make a wonderful
accompaniment to an afternoon Sangria.
