measures.
Learn to convert the different units of measurement and calculation
in cooking.
III. Type of Activity: Concept Notes
IV. Values to be Developed: Accuracy

Measurements and Calculations

Measuring accurately is probably the most important cooking skill in the kitchen.
Home economists in test kitchens spend many hours testing recipes with varying
measurements in a “tolerance testing” process. A recipe must perform well even
though the ingredient amounts are changed; if it fails, it is not published. Even though
the recipes in cookbooks are quite “tolerant”, the cook still has to follow basic rules
of measuring.

Common Cooking Abbreviations and Equivalent Measures

t or tsp= teaspoon
T or tbsp = tablespoon
c = cup
pt = pint

U.S. measurements used in the kitchen have these proportions:

3 teaspoon = 1 tablespoon = 0.5 fluid ounces
16 tablespoon = 1 cup = 8 fluid ounces
2 cups = 1 pint = 16 fluid ounces (a pint of water weighs one pound)
4 cups = 2 pints = 1 quart
4 quarts = 1 gallon
