Ingredients Preparation

1 Using a julienne peeler, peel zucchini and sweet potato into thin strips, then set aside.
2 zucchinis (approx. 450 g)

2 Place onion and parsley into mixing bowl and chop 5 sec/speed 7. Scrape down sides of mixing bowl
180 g sweet potato, peeled
with spatula.
½ red onion
3 Add eggs, flour and reserved zucchini and sweet potato, then mix 15-20 sec//speed 3, mixing with
6 sprigs fresh flat-leaf parsley, leaves only aid of spatula, until well combined.

3 eggs, lightly beaten


4 Place a large frying pan over medium heat and add oil. Working in batches, place heaped
80 g wholemeal self-raising flour tablespoons of the zucchini mixture into pan and fry 3-4 minutes each side, until golden and cooked
through. Transfer onto a plate lined with paper towel and cover to keep warm (makes approx. 25
olive oil, for shallow frying fritters in total). Serve warm with mashed avocado (optional) and natural yoghurt (optional).
