This report is to be adjusted on an ongoing basis to reflect developments and requirements in each
area.
Catering
Kitchen:
Practiced core team.
Use casuals for peak times, mostly locals, but casual kitchen workers take longer to train.
Generally, the core team prepares much of the meals prior to the large events and uses
casuals to put these on the plates.
It can be very hectic in the kitchen during peak times. Although the staff work well together,
the high demands could lead to burn-out or a high turnover of staff.
Service:
Practiced core team.
Use casuals for peak times, mostly locals.
Ongoing customer service training ensures that all members are working at a peak standard of
service.
Having a list of trained casual staff that can be called on when needed makes the area very
efficient in terms of human resources.
Wellness
Ongoing customer service training for all employees.
Many massage therapists work for several months at a time, and their training is not always
optimal.
Local casual staff are used to cater for peak demand. This makes the area very efficient in terms of
human resources.

Accommodation
Ongoing customer service training for all employees.
Local casual staff are used to cater for peak demand. The current issue is that the pool of casual
workers is not large enough. More casual positions would help to get the rooms cleaned on time
during peak periods.
Peak work periods can usually be planned well in advance, but casual workers need to live locally
to fill in for staff sick days and unpredicted overnight stays.
Administration
Ongoing customer service training for all employees.
Customer service is of a very high standard.
Core team of six staff, four of them part-time, who have been in the same jobs for several years.
