Ginataang Baboy is a Filipino dish made from pork cooked in coconut milk, typically with

vegetables and sometimes flavored with a bit of heat from chilies. It’s a rich, savory, and creamy
dish that's perfect with steamed rice. Here's a simple recipe you can try:

Ingredients:

 1 kg pork belly (or pork shoulder), cut into cubes


 2 cups coconut milk
 1 cup coconut cream (optional, for a richer sauce)
 1 onion, chopped
 4 cloves garlic, minced
 1 thumb-sized ginger, julienned
 2-3 pieces long green chili (siling haba)
 1 tbsp fish sauce (or to taste)
 1 tbsp cooking oil
 Salt and pepper, to taste
 1 bunch sitaw (long beans), cut into 2-inch pieces
 2 medium-sized eggplants, sliced into rounds
 Water (optional, to adjust consistency)

Instructions:

1. Prepare the ingredients: Wash and chop the vegetables and pork.
2. Sauté the aromatics: In a large pan, heat oil over medium heat. Sauté the garlic, onion,
and ginger until fragrant and the onions are translucent.
3. Add the pork: Add the pork to the pan and cook until it starts to brown. Season with fish
sauce, salt, and pepper.
4. Simmer in coconut milk: Pour in the coconut milk and stir. Let it simmer on low heat,
covered, for about 30-40 minutes, or until the pork is tender. Stir occasionally to avoid
the coconut milk from curdling or burning at the bottom.
5. Add vegetables: Once the pork is tender, add the eggplant and long beans. Continue to
simmer for about 10 minutes until the vegetables are cooked.
6. Add coconut cream (optional): For a richer, creamier texture, stir in the coconut cream.
Add the green chilies at this point for a slight kick. Simmer for another 5 minutes.
7. Season and serve: Taste the sauce and adjust the seasoning with more fish sauce or salt
if necessary. Serve hot with steamed rice.

Tips:

 You can also add other vegetables like squash or leafy greens (e.g., spinach).
 If you prefer more heat, you can crush or slice the green chilies or add a few pieces of
bird's eye chili (siling labuyo).
