THE RESTAURANT

 A restaurant is a food outlet that serves food and beverages to dine-in customers as
differentiated from those being served in take-out counters or vending machines.

 The type of service and the service procedures among restaurants vary depending
on their classification, the type of food and services, the volume of orders and the composition
of their prospective customers.

TYPES OF RESTAURANTS

1. COFFEE SHOPS- a cafe serving coffee and light refreshments. A casual dining outlet that refers to
people “on the go” such that most items served are short orders.

 Coffee shops require fast service to ensure a fast turnover of customers.

2. FOOD HALLS/FOOD COURTS- is generally an indoor plaza or common area within a facility that is
contiguous with the counters of multiple food vendors and provides a common area for self-serve
dinner. Food courts may be found in shopping malls, airports, and parks. Taken over from traditional
cafeterias. They offer a wide variety of foods, which guests select for themselves. Service staffs are
responsible for clearing the eating areas.

3. BISTROS/PUBS- bistro is a small restaurant, serving moderately priced simple meals in a modest
setting with alcohol while pub is a tavern or bar serving all sorts of alcoholic beverages. This style of
service applies in casual or pub environments. The food, usually main meals, is either collected by the
guests from a counter or served by service staff. An essential element of this service is speed.

4. CASUAL DINING RESTAURANTS - A casual dining restaurant (or sit down restaurant) is
a restaurant that serves moderately priced food in a casual atmosphere. Here, appearance and
atmosphere provide an environment for casual dining, but table service is offered. Informal restaurants
don’t always have a license to serve alcohol, but they have “Bring your Own” (BYO) facilities. Service
staff might be capable of friendly informality in their dealings with guest while remaining professionally
efficient.

5. NATIONAL or ETHNIC RESTAURANTS

- Any restaurant where the main focus of the menu is dishes that originated in a country or region other
than the country in which it resides could be considered an ethnic restaurant. In these popular
establishments, the style of the service may be as much as part of the culture experience offered to
guests as the food itself.

6. FINE DINING RESTAURANTS- "A fine dining restaurant has a formal atmosphere, is almost always a
sit down restaurant, and has a fancier menu than most restaurants. Fine dining restaurants offer wine
lists, and sometimes sommeliers, to help you with your food and wine pairing. They also have dress
codes in most cases." Usually has a suitably comfortable or impressive ambience for the fine cuisine on
offer. Service staff not only be discreetly professional in what they do, but also to be highly skilled and
knowledgeable.

7. CAFETERIAS (STUDENT/INDUSTRIAL CANTEEN) – a restaurant or dining room in a school or a


business in which customers serve themselves or are served from a counter and pay before eating.
These type of restaurants are meant for people with low meal budget. It serves value meals that are
usually displayed in fast food counters.
8. FAST FOOD RESTAURANTS - sometimes known as a quick service restaurant or QSR, is a specific
type of restaurant characterized both by its fast food cuisine and by minimal table service. Food served
in fast food restaurants typically caters to a "meat-sweet diet" and is offered from a limited menu; is
cooked in bulk in advance and kept hot; is finished and packaged to order; and is usually available ready
to take away, though seating may be provided. Fast food restaurants are usually part of a restaurant
chain or franchise operation, which provisions standardized ingredients and/or partially prepared foods
and supplies to each restaurant through controlled supply channel.
