CHAPTER 1

THE PROBLEM AND ITS SETTING

Introduction

Service management is becoming the new paradigm in the

hospitality industry. Hospitality establishments offer services to fulfill the

needs and experiences of customers through innovative concierge or

personalized services. The history of concierge service is similar to its

modern counterpart. The word “concierge” is uncertain, but some suggest

that it comes from the Latin “conserves”, meaning “fellow slave”. Others

claim that the first concierge “Count of the Candles” was in charge of Paris

royal prison, the conciergerie, where Marie Antoinette was kept before

succumbing to the blade of guillotine. Concierge services are also a terrific

new work/life benefit as corporations begins to offer these services to their

employees and clients. Concierges are being added to hospitals,

universities, shopping malls, airports and more.

A personal concierge will make arrangements and run errands, the

list of which is endless. Some examples are: booking a table at restaurant,

Arranging a housekeeper, organizing trades and services, arranging

events through to arranging relocation.

A Concierge Service is a business that is suitable for hotels and

resorts wherein it provides services such as making restaurant

reservations, booking hotels, arranging for spa services, recommending

night life hot spots, booking transformation (especially for taxi, limousines,

airplanes, boats, etc.). These services can range from planning and

booking your family holidays to making restaurant reservations or getting

you access to special events.

According to Cho, et al., the concierge service has evolved to meet

the demands of a new era and further customer satisfaction. The

concierge is one of the pivotal guest-contact employees in a full-service

especially in home and hotel. The concierge meets a guest needs by

providing information on concerts, sightseeing, dining and other activities.

This study is conducted to determine the feasibility of Personal

Concierge Services in CarCanMadCarLan as it aims to meet the needs of

the people especially to those who want personal assistance and service

errand. There are no concierge services yet in the locality so if the

business will be found feasible; it could help cater customer preference.

Moreover, it can also help the businessman to generate income by

performing errand service to give customer satisfaction. This study

provides significance not only to the business establishment and the

community but it is also a way to help people who need appropriate

concierge- related services.

Conceptual Framework

This study has the same concept with “Aspire Concierge Services” which

goal is to assist their clients all the time as they navigate towards new

normal. They will be able to provide different kinds of concierge related

services with a very negotiable price. Since the COVID 19 situation,

delivery services are a necessity as people are quarantined at home.

Their job is to ensure guests have everything they need by providing them

errand services.

Marketing Aspect. To determine the extent to which the goods/services be

generated by the project are needed or demanded and to design the

appropriate marketing strategies and plans that will help ensure that the

profits outputs will reach and be accepted by the target users (Jeziel K.

Camarillo, 2015).

Technical Aspect. Assesses the details of how you intend to deliver a

product or services to customers. Think materials, labor, transportation,

where your business will be located, and technology that will be necessary

to bring all this together (Lahle Wolfe, 2019).

Management Aspect. To assessing management, feasibility studies

compile data and analyses on a variety of other business components

including product development, competitors, marketing strategies, cost

structure and potential pitfalls (Writer, 2020).

Financial Aspect. Finance helps management gain a clear understanding

of the company’s current financial position, particularly whether the

business is profitable or not. Companies of all sizes benefit from through

financial planning to guide the business steadily down the path to future

growth (Brian Hill, 2019).

Social Desirability Aspect. Can be conceptualized as an individual’s

constant need for social approval and impression management in social

interactions (Bruce B. Frey, 2018).

CHAPTER 2

REVIEW OFRELATED LITERATURE AND STUDIES

This literature review below consists of concierge’s roles working in

a hotel by selling hotel’s amenities or advising competitor’s places and

products. Some journal articles, books, interviews, internet sources, and

newspapers were used to evaluate ideas for readers.

Foreign

Online food delivery services have been around for quite some

time. Several chain restaurants created websites to order take – out, but

these services limited to within the chain’s own restaurants. Individual

restaurants followed suit, creating their own websites for delivery. Every

grocery store began offering online delivery in the early 21 stcentury

(Relihan 2017). However, generalized online food delivery services that

offer delivery from many different restaurants have only become popular in

the past decade and they have done so rapidly.

By 2018, the online food delivery service industry had an estimated

$82 billion in gross revenue and accounted for 6% of the restaurant

market in 2020(Frost and Sullivan 2018; Morgan Stanley Research 2020).

These firms are backed by revenue growth more than 14 percent over the

past four years and are on track to double their market share by

2025(Morgan Stanley Research 2020). The rapid expansion of these firms

has even influenced some restaurants to change their layouts and migrate

to a “delivery only” model (Bond 2019). The restaurant market is evolving.

Consumers that use online food delivery services also have few

empirically quantified characteristics. Delivery is ordered to the

consumer’s home 86% of the time, and 74 percent of sales occur on

weekends (Hershberger et al. 2017). Further, in 2017, 43 percent of

individuals who ordered with online food delivery services say that it

replaced in an in- person meal at restaurant. This figure increased from

38 percent just the year before, suggesting that there is incremental

cannibalization with the introduction of online channels ( Morgan Stanley

2017).

Online food delivery services often state that they are providing

supplementary sales to restaurants. In fact, a survey of several thousand

restaurateurs found that offering online delivery has generated additional

sales for 60 percent of restaurant operators (Technomic Food Trends

2018). While online food delivery services claim, and actually do, provide

incremental sales, the profitability of restaurants is declining as online

delivery increases (Dunn 2018; Thompson 2019). This is mostly dues to

high fees that online food delivery services charge, not only as service and

delivery charges to the consumer, but also to the restaurant between 20-

30 percent of each purchase. Online delivery often represents a large bulk

of business for restaurants, so it’s not an option to cut online sales

channels.

Local Related Literature

According to the article published by Mary Delia G. Tomacruz and

Nancy T. Flor, (2018) entitled “Family perception and their buying behavior

for home- delivered food” states that Food delivery in the Philippines is

considered a major alternative to dining out and preparing meals at home

for families who want a respite from home- cooked meals and cannot

endure the inconveniences of dining out. Home delivery food

establishments can improve their competitive advantage through better

marketing efforts, more promotions and better delivery services. Food

delivery using motorcycles that can easily squeeze in and out of traffic is

deemed better option to dining out.

The take-out and delivery franchise Industry Study (2016) cited a

National Restaurant Association Survey in 2009 wherein 66% of quick

service operators believed that food delivery would become popular.

Ultimately, food establishments offering home- delivered food,

particularly fast foods, can improve their competitive advantage through

better marketing efforts, such as the use of mobile apps or short message

service (SMS) which) believed to be more beneficial in terms of price,

convenience and flexibility; offering a variety of product choices; more

promotions and better delivery services.

Convenience is one of the main reasons to order food online. Online food

delivery apps are the media through which the restaurants parcel food

directly at the doorsteps of the customers. According to a survey

conducted by Rakuten Insight in the Philippines, 71 percent of the

respondents stated ordering more through food delivery apps due to the

imposed closure of all restaurants during the COVID 19 pandemic as of

June 2020. On the other hand, only four percent stated that they ordered

online because they couldn’t cook.

A research on the changing market for food delivery (Carsten

Hirschberg et al 2016) indicates that on line’s penetration of the total food-

delivery market broke 30 percent in 2016. We believe penetration rates

will grow further as the market matures, eventually reaching 65 percent

per year. According to Gloria food the advantage of online ordering and

the reasons for the growth of food delivery app industry are Convenience,

Simpler menu to manage, significant savings, no Hassles etc. Food Panda

is an introduction to the newest food sensation that’s here to stay (Shiyin

Chan, 2015).

Food panda is a global online food delivery marketplace

headquartered in Berlin, Germany. Fun fact - they’re also known as hello

food in other places in the world.

Bhavna Singh (2015) said that Food panda has been present in the

Indian market. Food panda first major move was acquisition of

TastyKhana, which was launched in the city of Pune in 2007. Together

with TastyKhana and JUST EAT, it is now present in over 200 cities and

partners with over 12,000 restaurants. She also talked about JUST EAT

was launched in Denmark in 2001 and was traded publicly on the London

Stock Exchange. Their Indian business was launched as Hungry

Bangalore in 2006. It was renamed in 2011 when JUST EAT acquired a

majority share in the business. Today, the company partners with over

2,000 restaurants.

According to Deepinder Goyal, Zomato CEO and co-founder told

TechCrunch that he expects to reach 10,000 restaurants in India in a few

months. “We have a sales team of around 300 in India and 5,000-odd

advertisers… these partners know the volume we bring to them so it is

quite easy for us to launch this new service.”

Kim Dang et al. (2018) study on consumer preference and attitudes

regarding online food products examines how the Internet has changed

people’s food-buying behaviors. The study is significant because it

establishes the underlying consumers’ concerns with regards to food

safety information, especially for online food products. Kim Dang et al.

(2018) study relies on a cross-sectional study conducted in Hanoi,

Vietnam. The findings are reliable as they are based on responses

gathered from over 1736 customers through face-to-face interviews. While

the preferences and attitudes toward buying food online differ from buying

other commodities, Kim Dang et al. (2018) note that the laws governing e-

commerce in Vietnam are the same. As such, the findings provide

practical advice to online food retailers and the Vietnam government on

how to implement appropriate legislation with regards to trading online

food products.

Martinez-Ruiz and Gómez-Cantó’s (2016) study emphasizes that

using the Internet to seek food service information has now become a

common practice among people today. More people than ever before

have positive attitudes toward finding information about food online.

(Martinez-Ruiz and Gómez-Cantó, 2016; Maison et al., 2018).

Also, people are more likely to search information about food on

the Internet than any other product or service (Hidalgo-Baz et al., 2017;

Whiley et al., 2017; Wong et al., 2018). However, Kim Dang et al. (2018)

study found that a significant number of consumers were unconcerned

about the accuracy of the evidence regarding food safety they found

online in selecting food products on the Internet. The conclusions drawn

from the current article review produces practical pieces of advice to

consumers buying food online as well as the food retailers selling food

over the Internet.

According to MANILA, PHILIPPINES, November 14, 2019 – Grab

Food, the leading food delivery platform in Southeast Asia and in the

Philippines, celebrates its first anniversary in the Philippines by

recognizing the most successful Filipinos on its platform. In October 2019,

Grab Food gathered its partners from Metro Manila for its first ever Golden

Lunch Box Awards, a recognition given to the consumers, merchant-

partners and delivery- partners with the most outstanding performances

and breakthrough growth.

Grab Food was officially launched in November 2018. Today, Grab

Food has the widest selection of restaurants and largest operational

footprint in the country – with 35 locations and counting, and dedicated

pool of delivery partners nationwide. It is a major partner of Mc Donald’s,

KFC, Pizza Hut, Bon Chon, The Max’s Group, and almost every major

quick service restaurant brand in the country, including being the only

accredited end-to-end food delivery partner of the Jollibee Food

Corporation. We are also trusted partner in the growth of small and

medium enterprises like Jollijeeps.

The impact it has since created in the community of consumers,

delivery- partners and merchant- partners has inspired grab food to invest

in elevating the lives of more Filipinos beyond the 40,000 micro

entrepreneurs it has already served. Grab Food effectively improves

livelihoods by creating more income opportunities that shape the future of

the food industry in the Philippines in an increasingly digital age, and

ensuring that merchants, even smaller players like jollijeeps, can tap into

and grow into this new digital food economy. Fueled by strong growth in

2019, Grab Food aims to continue its growth trajectory and in 2020,

expand its operational footprint to at least 10 more cities in the Philippines

and accelerate the growth of its partners through new services and

innovative F&B Solutions in an increasingly digital age.

Grab Food also marks another business milestone as the #1 most

often used food delivery platform in the Philippines, as position it has held

for 10 consecutive months from December 2018 to September 2019 in a

market survey conducted by a Global Market Research Firm Kantar in the

third quarter of 2019, 76% of Filipino consumers said that Grab Food is

the most used delivery platform.

Grab Food believes that the growth shared benefit of the digital

economy, therefore putting focus on helping its partners succeed through

rapid expansion, incremental revenue and massive consumer reach via

the Grab Food online Storefront.

Synthesis Review

The studies cited above contribute significant suggestions relevant

to the study “Personal Concierge Services”. Based on the studies cited

above, concierge service is now a significant business especially in this

era of Pandemic to cater the needs of the customer in providing errand

services such as food delivery, travel booking and more. The rise of online

food delivery apps gives the people an opportunity to purchase online in a

hassle-free transaction. It gives them convenience and satisfaction while

enjoying door to door delivery. Both foreign and local has the same

concept in providing errand services and, they are similar in the strategy

that they used. Like for example, they use an online app to promote their

business to attract more customers, to boost their sales or on how to earn

loyalty from the customers.

transaction.

Typhoon – this factor can affect the business because of its bad

weather. The delivery man doesn’t just easily come out to deliver the

orders or even reach out the customer for personal service when there is

a heavy rain and devastating storm due to typhoon.

Earthquake – this factor can affect the business especially when

the earthquake is in 6.0 or 7.0 intensity because it can cause damage or

destroy the office.

Customer relation - it can affect the business especially through

receiving negative feedbacks from the customers so proponents must

listen also and consider customers’ suggestions.

Technological change – the constant change of new technologies

will be a factor to concierge service in order to have more inputs. It needs

to upgrade and adapt new technology.
