Do you know that the percentage of income spent on food


is greater among the lower
income group?
Persons on a low income usually have limited amount
of money to spend on food. They may have little
knowledge of food value and sometimes shop
unwisely.
Food is an expensive item in a family’s budget, so it is
important to shop economically and carefully. Many
nutritious foods are inexpensive. With careful planning
you can have nutritious meals on a limited budget. A
budget is any plan for spending income.
Steps In Preparing a Budget
1. Estimate your income.
2. Set goals
3. Determine needs
4. Estimate expenses.
To work out how much money is needed to be
allocated to the food budget consider the food needed
by each member of the family. We must also factor in
how much is needed and what is the cheapest way of
purchasing food items.
Before you go shopping make a shopping
list.When money is limited:
*Have an idea what it should cost to purchase foods for your family’s need at the current prices.

*Include the appropriate use of leftovers.

*Buy foods in season as they are fresher and cheaper.

*Know which foods are usually the best buys in terms of nutritive value and use them
extensively eg. peas, beans, lentils and cheaper cuts of meat, fish etc.
CONVENIENCE FOODS
What are Convenience Foods?
Convenience are foods that have been processed to make
them more convenient to store or use. They are prepared or
processed to reduce time needed for preparation, to make
the product last longer and easier to carry and store. These
foods can be purchased in varying degrees of preparation. In
today’s fast paced world, more persons are drawn to use
convenience foods; that is food prepared in some form
before they buy them. Some of these foods can be eaten
straight from the package.
TYPES OF CONVENIENCE FOODS
1.DRIED/DEHYDRATED FOODS
These foods generally have to be reconstituted with water or other liquid before use.
Soups- stock in sauce and soups
Cereal- coating fried or baked foods, cookies and other baked products.
Fruits(raisins, prunes, pawpaw, etc.)-snacks, stewed, in cakes and other baked products.
Milk-drinks, baked products, desserts, cereals.
Vegetables-stews, casseroles.
Fish-main dishes, appetizers, snacks.

2.CANNED FOODS
Milk- coffee, tea, drinks, cereal, casserole, desserts.
Whole fruits-dessert alone or in combination eg.,trifle, cakes, pies.
Vegetables-alone or in combination eg. salads, soups, stews, casseroles.
Fish-sandwiches, main dishes and salads
Sauces- main dish, casseroles.
Soups- soups or sauces in casseroles.

3. FROZEN FOODS
Meat, vegetables, pastries, doughs, fish, fruits, fruit concentrates.

CONVENIENCE FOODS

3.More convenient for the elderly
4.Saves time and easy to prepare
5. Can be kept for emergencies
6.Usually packaged with instructions that the
inexperienced cook will understand.
DISADVANTAGES OF USING
CONVENIENCE FOODS

1. Usually more expensive than expensive ones.


2. Sometimes less tasty and less attractive.
3. Most are high in sodium(salt), sugar and fat that may
lead to nutritional complications.
4. Many contain additives which may cause allergic or
hyperactive reactions.
5.As food is processed, it loses nutrients.
6. Must follow the instructions carefully for good
results.
RULES FOR PREPARATION AND
SERVICE OF CONVENIENCE
FOODS
The quality of the product as served is dependent on how well it was handled
and prepared. It has to be done with the same consideration that you give to
fresh, raw ingredients. It is recommended that you check cans for bulges and
dents and check packages for tears.
Store properly. Frozen foods must be kept cold and shelf stable foods(dry and
canned) should be stored in a cool, dry place, tightly sealed.
Use proper cooking methods.
It is the duty of the person preparing and serving food to ensure that food is
prepared as hygenically as possible.
Know to what extent the product has been prepared .
Foods should be attractive, appetisizing and well presented.
It is recommended that where possible that convenience foods be in such a way
that they enhance the product being prepared,eg. canned vegetables in a freshly
made pasta salad.
