Last Saturday marked the second day of our immersion program at Gawad Kalinga Franco Ville,
a day we dedicated to sharing the art of making tocino. Our goal was clear: to equip the people of
Franco Ville with the skills to marinate and preserve meat effectively. Leading the demo was
Cyrus, our go-to guy for all things tocino.
As Cyrus worked his magic, meticulously demonstrating the ins and outs of the tocino-making
process, the residents of Franco Ville gathered around with genuine curiosity painted across their
faces. It was clear they were not just bystanders; they were eager learners, ready to absorb every
detail of this potential new venture.
The atmosphere was far from formal. There were no suits or ties, just a group of people
genuinely invested in the possibility of transforming what we shared into a sustainable source of
