INTRODUCTION

Turon, a popular Filipino snack consisting of a banana wrapped in a deep fried spring roll
wrapper,usually coated with caramelized sugar, Slices a jackfruit and leche flan often
accompany the banana as a complementary filling. It is one of themore common street foods in
the Philippines. sold by many street vendorsin both urban and rural areas. It is often sold
alongside other banana based snack foods, such as banana cue, and maruya, or banana fritter.It
sells banana wrapped in spring roll wrapper fried to crispiness. It served with different filling
such as jackfruit with leche flan, you can dish up the product with flavoured syrups to attract
customers especially the kids.

Turon with a twist- a product that offers something new, different from the mass market turon
sold in the streets now. Introducing the squash turon with dulce replacing the banana for a
squash (Cucurbita maxima) because it has nutrients that have a great benefits to the body.
According to G. Gonzaga, Squash, which is also known as Cucurbita maxima, is a genus of
herbaceous vines in the gourd family, Cucurbitaceae, that is native to the Andes and
Mesoamerica. Five species are grown worldwide for their edible fruit and known as squash,
pumpkin, or gourd, depending on species, variety, local parlance, and their seeds
(Gonzaga,2020). Squash is rich in vitamin A,vitaminB6, vitamin C, folate, magnesium, fiber,
phosphorus, and potassium both squash and banana are high in dietary fiber and potassium.
Squash has 5.2 times less sugar than banana, Squash has 54% less carbohydrates than banana,
Squash has 55% less calories than banana, Squash has more beta-carotene and alpha-carotene
than banana, however, banana contains more lutein + zeaxanthin than squash, Squash has
more thiamin, however, banana contains more riboflavin and Vitamin B6, Squash is a great
source of Vitamin C and calcium, Squash is an excellent source of Vitamin A (Sourpage,2019).
We used squash turon with dulce because squash has nutrients that are good for our body.

Squash turon aims to produce and create a nutritious snack for the people. We researchers try
this squash turon because many young people today are deficient in various vitamins and
minerals in their body. Vitamins are nutrients that one's body needs to be healthy. When there
is a lack of vitamins in our body, our immune system will weaken and will be prone to sickness.
Our aim is to entice people to eat healthy foods that can give them the vitamins they need.
The researchers decided to venture this kind of product because different kind of opportunities
are visibile in this product. According to Willflyfood.net the number 1 Filipino snack food is
turon.The researchers incorporated the squash in this product in order to make it healthier
than the usual banana turon. People are into food that are new and different that they are
willing to try the food that are unique and unknown to them.

Background of the Study

Turon are native to the Philippines. Saba bananas are chubbier, thicker, and moreangular in
shape than standard bananas. They can be found as most Asian markets undervarious names
such as” cardaba, sweet plantain, or papaya banana.Turon is a popular Filipino snack that’s
sweet, crunchy, and satisfying. Ripe saba banana,jackfruit, and brown sugar are rolled together
in a flour lumpia wrapper and fried to a goldencrisp. Typically served for merienda (Filipino
afternoon snack) or dessert, turon has the perfectblend of flavor and texture
(thelittleepicurean,2018).

According to the food technologists at the University of the Philippines Los Baños have
identified local squash varieties that may be used for food processing. Squash is a nutritious and
commercially important vegetable planted in many regions in the Philippines. Squash has a
huge potential for processed food, e.g., noodles, soup, baby food, packed snacks and bread.

The researchers used squash turon with dulce because squash has nutrients that are good for
our body. This study utilized experimental research, which strictly adheres to a scientific
research design. It includes a hypothesis, a variable that can be manipulated by the researchers,
and variables that can be measured, calculated, and compared. A simple random sampling
technique was used in this study. Respondents assessed the taste, aroma, nutritional value, and
presentation of the product. In terms of taste, students had a weighted mean of4.2, with the
verbal interpretation of highly acceptable, and teachers had a weighted mean of2.8, with the
verbal interpretation of acceptable. In terms of aroma, the students had a weighted mean of
3.2, with the verbal interpretation of highly acceptable, and the teachers had a weighted mean
of2.5, with the verbal interpretation of acceptable. In terms of the nutritional value, the
students had a weighted mean of4.7, with the verbal interpretation of very highly acceptable,
and teachers had a weighted mean of3.2, with the verbal interpretation of acceptable. In terms
of competitiveness, the weighted mean for students was 4.5, with the verbal interpretation of
very highly acceptable, and a weighted mean for teachers was 3.1, with the verbal
interpretation of acceptable. We recommended this product because it is innovative. It has
vitamins; summer and winter squash are full of nutrients and contain trace amounts of B
vitamins and healthy doses of iron, calcium, magnesium, and potassium. This product is
marketable and affordable (Ebion, J. A. et al., 2020).

Statement of the Problem

This study aims to make a new kind of turon which is squash turon and determine the general
acceptability of squash turon.

Specifically, the study will seek to answer the following questions.

1. What makes this product different from the traditional turon?.

2. What is the level of general acceptability of squash turon?

3. What is the consumers' level of acceptability?

Theoretical Framework
Instructions:

Wash, peel, boil and drain pumpkins or


squash. Slice into 1-inch size.

In a shallow pot, pour cold water until it


Conceptual Framework covers all pumpkins/squash. Season with
a pinch of salt and let it boil.

Adjust heat from medium-low, and boil


for 16 to 20 minutes or until you can
insert fork easily.

Transfer the pumpkin/squash in a large


colander and drain water.

Put the cooked pumpkin/squash into a


large bowl after draining. Mash with a
fork coarsely.

Pour condensed milk, butter, egg,vanilla


extract, honey and sugar. Mix well.

Prepare the wrapper and wrap like a


lumpia rolls. Seal the ends with a touch of
water. Set aside.

For Frying:

In a pan, heat the oil and put-in some


brown sugar.Wait until the brown sugar

Significance of the Study

this research would be beneficial to everyone because they will know that the squash or
kalabasa can be made as a turon substitute for the banana and will be a popular snack for the
children and the people. Also, the vitamins contains in the squash that are beneficial to the
body that will improve healthiness and also a very affordable snack to the masses.
Scope and Limitations

our study/research only focuses to the turon and the effectiveness of the squash or kalabasa
replacing the banana in turon as an ingredients. We the researchers will follow a certain recipe
and procedure to cook the squash turon and will represent it to our judges(panelists ,
professor, students). The researchers will conduct the experiment in the MDM area only and
cook a portion of 30 pieces of Squash Turon for the students, panelists, professors and
Teachers.

Definition of Terms

Acceptability - The quality of being accepted.

Cucurbita Maxima- plant bearing buff-colored squash having somewhat bottle-shaped

fruit with fine-textured edible flesh and a smooth thin rind.
