Mar: Today 'm taking to Marta Stanton, who runs her own ‘mobil’ restaurant. Mart,
how did you get int the restaurant business?
Marta: Wel, lest to cook at college. | always wanted to open my own restaurant — but
had no money. So Igotajob asa chef. had a sos of ideas for ne dishes, which
the staff thought woul sel ut the guy who oumed the place wasnt interested.
“That's when a fend told me about the mobile restaurant ide. Itsounded great.
Manz Tellus about.
Marta: Wel, t works ike this: you decide on 8 menu ~ obviously you have to be abe to
ek = then you advertise it so people can book a meal. The most amazing hing is
al the advertising’ done trough socla-networking websites. People set up tables
in thes sitng-room, or inet carpark, an ompty factory ~ anya infact. And
‘because you know how many people you're cooking for, food doesn't get wasted
Man: So why wasit good for you?
‘Marta: Wal, vious reasons, Like | could buy ll the ingredients without sk because you
‘make customers payin advance. The greatest advantage, though s by having a
‘maximum often customers, | didn't need tire a waiter. Then, ofcourse, | could
prepare everyting at home just take a camping gas cooker wth me, plus some
plates, lassas, ives and forks.
Man; Do younever un ino problems?
Marta: The whole experience i un. People watch you cook andthe atmospheres relaxed.
| id one meal on a beach whieh almost went wroog because I didnt think about
the wind blowhg sand into people's food. Fortunately, fd brought alarge uml
te protect mys fom the sun, 80 put around thet table instead!
133{And you sometimes use your own fa?
If the weathers bad, people come to my home instead, butt gets very crowded.
Even though fv actually got enough chairs and a big table, t's not ideal. Iwas
"worted we might cisturd the neighbours, but they've been alight about love the
temporary fee ofthe motile idea, so home's not realy what's about.
So, what's the future of mobile restaurants?
Well its rather unoertin. Lots of now ones are popping up because i's become
fashionable, | think health inspectors wil want to check them out. That doesn't
‘worry me, because Fm a trained chef, But if someone gotilinaless serious one,
\we might all gat a bad name, So| guess inspections are a good thing,
