READING THE MEDITERRANEAN DIET: A CULTURAL HERITAGE OF HUMANITY The Mediterranean Diet is based on typical foods and popular cooking styles from different countries bordering the Mediterranean Sea. This traditional diet t has been recognized by UNESCO as an intangible cultural heritage of humanity. This recognition values and emphasizes these appreciated culinary practices not only as a healthy nutritional model, but also as part of a wider culture which promotes social interaction and respect for its territory and biodiversity. Thus, this widespread diet is based on a high intake of cereals, beans, vegetables. i fruits, poultry, some dairy products (mainly yogurt and cheese). and unsaturated. fats (particularly virgin olive oil). Besides, this common diet also recommends ’ drinking plenty of water and doing physical activity, There is strong evidence that these traditional eating habits may prevent cardiovascular diseases, cancer, metabolic syndrome and other chronic diseases.
