Cross Contamination

Cross contamination occurs when harmful bacteria are transferred from one food, surface, or person to another. There are three main ways this can happen: 1) from hands to food if hands are not washed properly before handling food; 2) from one food to another if raw foods drip juices onto other foods; and 3) from food preparation equipment and surfaces if they are not properly cleaned between uses with different foods. Proper handwashing, separating raw and cooked foods, using separate cutting boards for different foods, and sanitizing surfaces can help prevent cross contamination.
