{EDITOR’S LETTER}
TEAM SPIRIT
I’VE NOW BEEN the editor of Home Beautiful magazine for more
than 10 years, which means that this editorial is my 10th Christmas
letter. Over the years, my editorials have been quite an insight into
my personal life. Often I talk about my family, and each December
I’ve covered the traditions we’ve honoured over many years. You
would think by now, I’d have exhausted every subject. However,
behind every single one of my letters is my other family, bound
PENDANT by more traditions than I’ve shared on these pages.
Mercator It is of course my wonderful Home Beautiful family. For
‘Vera’ cut glass the past decade, the HB team has been more a part of my
pendant, $60,
everyday life than almost anyone else. Working on a magazine
Bunnings.
like HB is a passion that you live and breathe – you pour every
ounce of yourself into each issue. But there is nothing, nothing
quite like the feeling of seeing the finished issue in print. It’s
a moment we share with such regularity, it’s truly a miracle
that is still yet to tarnish with age.
ON MY
WISHLIST
everyday LIFE THAN ALMOST ANYONE ELSE”
THIS Here at HB, we know each other inside out, we’ve supported
MONTH each other through ups and downs, and our personal lives are
♥ certainly not left behind at the office door each day. I still
recall the team sitting around our meeting table, fastening
my father’s funeral books with a beautiful blue ribbon. We’ve
crowded around many a maternity ward armed with flowers,
gifts and sturdy shoulders; and we even have our own Christmas
traditions, except ours start in the middle of winter, when we
begin emailing festive ideas, locations and stories we want
SANTA SACK to share with you. After months of meetings and inspiration,
‘Naughty Or Nice’ the work starts in earnest – huge photo shoots with trucks
Santa sack, $29.95, and trucks of furniture, accessories and decorations that
Freedom. come together to create a truly beautiful issue.
CHAIR This year, once again, the team has outdone themselves – and
Adirondack chair when this issue hits my desk, the Christmas spirit will take flight.

THE COLOURS OF AUSTRALIA SINCE 1966. COLORBOND steel is a familiar sight around our homes and yards, but there
are many larger buildings that incorporate COLORBOND steel into their designs too, such as Ivanhoe Grammar School’s
Science and Senior Years Centre. Inspired by a volcanic rock called a ‘thunder egg’, the design uses COLORBOND steel
in the colour Monument for its outer skin to ensure that the building fits well in its surroundings and to contrast with
the wonderland of colours inside. McBride Charles Ryan architect, Debbie Ryan, said ‘COLORBOND steel helped us out
enormously – the cost was reasonable, the material is efficient and it looks beautiful’. Visit COLORBOND.COM to find out more.

good-looking silk pillows are hard to come by. These marble-look silk

Fans of Channel Seven’s home renovation show House Rules might
recognise this pretty geometric print (above), as the work of Michelle
from season four. Competing for team South Australia with her husband,
Brooke, Michelle often used her artworks to add flair to rooms the couple
renovated. Produced under the name Ettie Ink, Michelle’s newest
collection features prints embellished with hand-leafed gold and copper.

We loved the round beach towel trend, yet from
a manufacturing point of view, cutting a circle from square

blanket or even a throw on the bed. Visit atolyia.com.

REVEALS A FEW OF HER FAVOURITE THINGS
WORDS & STYLING TAHN SCOON PHOTOGRAPHY JOHN DOWNS
SANDY SHORES “Though I’d never collect new coral off the taking inspiration
beach, this is a very old collection I’ve acquired [above]. I love “One of my passions is tribal jewellery. This necklace from Papua
stumbling across discarded collections, there’s an intimacy to New Guinea is made from pigs’ teeth [above] and the bangles include
it and a sense of connection to the original owner.” a polished-cow horn piece from South Africa and an etched poly

reminders of the strong, inspiring women I’ve met on my travels.”
style insight:
While Bridget is the creative lead, she has a head chef, florist and
builder who turn her clients’ desires into reality. Her workshop, which
also encompasses the office and kitchen, is open by appointment
and, from the very first step inside, there’s a sense of an Aladdin’s
cave-style wonderment. Most of the walls are either painted dark or
panelled with rustic timber, and smooth concrete flooring leads to
the commercial kitchen at the back. Dotted throughout are Bridget’s
collections, which range from vintage ball gowns and typewriters
to clusters of beautifully aged crystal vases, and its these vignettes
that bring the space alive and give potential customers a glimpse
of how inspired their own function could be.
Even the food is influenced by history and family, as Bridget’s
husband, Michael (who is also the Butchers Daughter builder),
comes from a long line of dedicated home cooks. “Michael and his
parents are fabulous cooks and they’ve actually created a lot of the
recipes we use,” explains Bridget. “His father is Hungarian and his
mother is English, and they pickle and cure things that they’ve
grown and even make gin and vodka! They’re incredible.”
It’s this personal attention to detail that sets Butchers Daughter
apart. “I’m big on menu tastings,” says Bridget. “I like to be flexible
rather than just offer set packages because, to me, catering is
all about catering to what people want! Each menu we put
together is different every time.”
For more information, visit butchersdaughter.com.au.
TOP: Bridget at the Butchers Daughter workshop. The long floristry bench was made by her
husband, Michael, and the dress in the background was a gift from her sister-in-law, Kim.
RIGHT: This year’s Christmas “tree” is eclectic, quirky and deeply personal. Vintage chess
pieces and tiny toys serve as decorations, while tilting coiled wire acts as the topper. >
2.
“Christmas food for me is always a seafood feast with a beautifully
dressed glazed ham and a load of delectable sides, bottles of
good local wine, plus a gin and tonic to start!”
3.
“My flowers for our Christmas table are hand-picked Australian
natives straight from my garden, then randomly placed in
different vessels down a long communal table.”

CHRISTMAS
AFTER FIVE YEARS IN LOS ANGELES, RONEL AND GARY BROUGHT
BACK A TASTE FOR HOLLYWOOD GLAMOUR – AND A BIGGER AND
BETTER SET OF FESTIVE TRADITIONS FOR THEIR SYDNEY HOME
STORY SHELLEY TUSTIN STYLING STEPHANIE POWELL PHOTOGRAPHY SIMON WHITBREAD
“WE HANG lights IN ALL THE TREES AROUND THE BACK GARDEN.
AND WE ALL HAVE CHRISTMAS pajamas , INCLUDING THE PETS!” ~ RONEL
renovation soon took on a life of its own. “We got so carried away and
ended up gutting the whole home,” says Ronel.
While Ronel had a strong sense of what she wanted, interior
designer Sarah-Jayne Marriott was brought in to bring Ronel’s vision
to life. “The home was really dark and cold – it didn’t have any heart,”
says Sarah-Jayne. “We started off by trying to bring lots of warmth
into the home, lightening the walls, adding more windows where we
could and bringing in beautiful flooring.” The project was unique in
that Ronel already had a full home of furniture, collected in the US.
The end result is a home that feels calm and welcoming. “There’s
a harmonious feeling throughout the rooms – there’s different
elements, but also a beautiful thread running through,” says
Sarah-Jayne. And so, with this abode, the family has finally found
their permanent home and an antidote to their wanderlust. “There’s
nothing better than Sydney on a glorious day – it’s breathtaking,”
says Ronel. “I’m not moving again.” And that’s the best Christmas
present the family could ask for. HALLWAY Her time in America heavily influenced Ronel’s interior
style, with many of her cherished pieces boasting a grand sense of

KITCHEN
With its Shaker-style cabinetry and
Carrara marble counters, the kitchen
(left) embodies a graceful Hamptons-
style – but with a few bold twists. Classic
knobs and drawer pulls from Mother
Of Pearl & Sons Trading are contrasted
with long, ornate handles (below left)
bought from a store in LA. “They do all
the really over-the-top stuff there and
I wanted something special,” says Ronel
(pictured). An enormous cage light from
Imagine This adds drama and echoes the
dark metal cabinetry. “I wanted something
special, but I thought a chandelier would
be too much, then I saw this and it was
perfect,” says Ronel. On the practical
side, the kitchen is well equipped for
entertaining; the adjoining laundry was
moved to make way for a walk-in pantry,
as well as an ensuite for son Mathew’s
room. A large freestanding oven is
big enough to cook for a crowd, while
the comfy bar stools from Canalside
Interiors are perfect for family meals
and more casual gatherings.
FORMAL DINING
Located on the home’s lower level, the
dining area’s distance from the kitchen
is more than compensated for by the
direct access to the outdoors, the stunning
view of the pool and the leafy embrace
of the trees. This is where the couple do
all their entertaining (opposite) and it’s
a space well suited to the task, with
the grand dimensions of a table from

at Giannetti Home (all from the US),
as well as the nearby convenience of
a powder room and bar.

MAIN BEDROOM
Now a palatial master suite, with sliding
doors that open to take in the adjoining
sitting room, it’s hard to believe this
room (right) almost prompted the couple
to sell the home. “It had just one window
and was half the size,” says Ronel.
Reclaiming the walk-in wardrobe – which
was moved to the adjoining subterranean
storage space – dramatically expanded
the size of the room, while the bespoke
sliding doors create a shifting boundary,
either flooding the room with light or
making a cosy enclave. Explains designer
Sarah-Jayne: “We were trying to create
a sort of secret entry where the doors
could be shut and hide the bedroom
when they’re entertaining. And when
they’re not, they can have the doors
open and the sitting room becomes an
extension of their bedroom.” Beautiful
bronze mirrors were sourced from the
US and shipped to Marrickville Joinery
to be turned into solid doors, which
were then painted a lovely wash to
match the antique patina of Ronel’s
favourite furnishings, including the
bed from Eloquence and oversized
Layla Grayce lamps, all from LA.

COMING
together
TWO BECOMES ONE The home of Tammy and Colin and their three children, Zac, seven, and twins Leyla and Jesse, both four, is the ultimate
in adaptable living, with three dining and three living spaces. The dining room (above left) is open on both sides – to the lap pool on one and
grassy courtyard on the other – creating a lovely indoor-outdoor flow. The outside can be enjoyed in the adjacent living area (above right), where
a collection of succulents sits atop a bookshelf that holds an array of objects, including a robot puzzle by Gaya – The Art Of Thinking. The lap
pool (opposite) is one of the family’s favourite outdoor spaces, where creepers add an organic touch and a sofa bed offers a little creature comfort

the industrial-look glass-and-metal screen is a second living area. The
built-in fireplace with concrete plinth is an object lesson in modernity

A SYDNEY FAMILY HAS CREATED AN
AMERICAN-STYLE SANCTUARY BY THE SEA
STORY & STYLING NATALIE WALTON PHOTOGRAPHY CHRIS WARNES
EAST COAST ESCAPE In its previous incarnation, this house was a 1960s brick home. Homeowners Lisa and Adrian (pictured opposite & above
with daughters Charlotte and Perdita) decided to knock it down and a stunning new-build was created in its place. The untrained eye would
never know this eastern Sydney home’s evolution, thanks to the characterful timber panelling in Porter’s Paints Grey Pepper and white picket
fence. Inside, a classic East Coast American-style pervades. Lisa, who found most of her furniture items in the States, follows a simple decorating
mantra: “Keep the big furniture pieces classic and change the mood with cushions and rugs.” A large open-plan kitchen, dining and living area
is home to striking pieces such as the 8-seater rustic dining table and show-stopping chandelier (opposite). Find similar at Temple & Webster. >
DINING AREA A table fit to entertain a crowd was a key consideration KITCHEN The kitchen needed to have an easy flow to the dining area, as
for Lisa and Adrian when they chose this grand item (above) purchased well as function as the heart of the house. “It’s where everyone gathers,”
overseas; find a similar farmhouse table at Sally Beresford Antiques. Lisa says Lisa. The six-metre long Carrara marble benchtop accommodates
matched the table with original ‘Bentwood’ chairs the couple sourced in drinks, grazing and allows the cook to enjoy the conversation. “It’s where
Poland (find this design at Thonet), but explains, “The important part when the kids sit every afternoon to debrief the day,” she adds. White Ikea

A HISTORIC SYDNEY HOME IS GIVEN A
SYMPATHETIC AND MODERN MAKEOVER
TO CREATE A LIGHT-FILLED ABODE
STORY ANNETTE DASEY STYLING STEPHANIE POWELL
PHOTOGRAPHY CHRIS WARNES
IN AND OUT “This is the gathering place, the assembly area before school and from where I yell up the stairs, ‘Hurry up! Get your shoes on,’”
says homeowner Heidi (pictured opposite with dachshund Isabel), who shares this bright and airy home in Sydney’s eastern suburbs with her
husband, Michael, their two daughters and her mother, Noelene. Central to the home’s entrance and stairway – carpeted with Belgium Weave
from The Natural Floorcovering Centres – is an octopus artwork by Anna Cayzer that Heidi and Michael found in children’s boutique Salty
in Avalon. Luscious Strelitzia fronds in a blue vase set the summery vibe of this eclectically decorated home where beautiful hand-loomed
pieces from Morocco abound – take note of the tablecloth (opposite) in the family’s alfresco dining zone, from Heidi’s store Paddo To Palmy. >
A
fter eight years living in the urban hubs of Singapore,
Hong Kong and inner-city Sydney, Heidi and
Michael dreamt of a leafier spot for their family. So
in late 2014 they moved to Sydney’s eastern suburbs
after buying a beautiful 1900s cottage, steeped in
history and overlooking the city’s famous harbour. “We’re more
suburban now – our youngest daughter, Gisele, will jump over
the fence in the afternoons and hang out with the neighbours for
hours,” says Heidi (pictured top right with Gisele), the owner
of homeware and fashion brand Paddo To Palmy.
Another enticement was that the local primary school had
a green-thumbed initiative that daughters Ella, nine, and Gisele,
seven, now adore. “The Stephanie Alexander kitchen garden at the
school was a big reason to move here,” says Heidi. “After living
in Asia, we wanted to ground the kids and the girls’ school is spacious
and green. They’re spending so much more time outside.” And
the gardening and cooking bug seems to have rubbed off on Heidi
and Michael, who works in finance. “My husband loves having the
extra garden space,” says Heidi. “We started a veggie garden, and are
patiently waiting for our raspberry canes to fruit. We have working
bees every few Sundays – Gisele is a particularly good weeder!” >
KITCHEN & DINING Before moving in, Heidi gave the kitchen
a quick refresh that included moving the sink, and adding a Zip
water filter and extra cupboards. “The sink was to the right so we
moved it under the window, replaced the cabinets, put brass knobs
on and added honed Carrara marble,” says Heidi. The cabinetry was
supplied and fitted by Maroubra Doors & Kitchens, and Heidi chose
handles from online store Knobs, and a mixer and double sink, both
from Ikea. “It’s not a super big kitchen but it’s functional, especially
with the separate pantry.” The family eats breakfast at the bench,
while dinner is often at the table and chairs from Vampt Vintage. Ella
(below) sits beside a stunning yellow artwork by family friend George
Raftopoulos. “I love it, especially the blue and the yellow,” says Heidi. >

An easy way to update
old furniture is to have it
recovered, as Heidi did with
her blue Chesterfield and
cream two-seater. “I reupholster

“The cream two-seater was my
husband’s from more than
12 years ago that I upholstered in
Hong Kong.” Heidi’s local go-to
upholsterer is Justin Puddick
Upholstery; reupholstery.com.au.
< The family is also embracing being close to Sydney’s eastern
beaches and to the gentle harbour ones, including a beautiful one
nearby. “I’d always wanted to live near the beaches and had been
stalking houses for three years – we missed out on so many,”
says Heidi, who feels fortunate to have nabbed the gem the family
today calls home. “I love old homes with character, and I think
I may have bought this one for the French doors and the bay window
in our bedroom. I can spend all day in our bedroom. Most days
I set up the laptop on the bed and work from there.”
When she’s not soaking up the serenity upstairs, Heidi works from
a separate studio for her label Paddo To Palmy, which began in 2011
as a blog about the couple’s Paddington and Palm Beach renovations
and became a label when she couldn’t find many Moroccan homewares
– a favourite – in Sydney. “I dragged my husband to Morocco and
bought 40 rugs, and met a woman working with artisans using bright
colours they weren’t traditionally using,” says Heidi of the conception
of the brand. “I designed the Pom Pom Blanket collection and some
ceramics and cushions.” Although some homewares are still available
at Paddo To Palmy, Heidi is focusing her attention on clothing.
Before the family moved in, there were a few minor tweaks to do
with Heidi remaining conscious of maintaining the heritage feel of
the home: the interior was painted, kitchen updated, and carpet
replaced. “The floorboards were three different types of timber so we
limewashed them to make them consistent,” says Heidi, who moved
much of the furniture from the family’s previous Paddington terrace
into their new abode. “I bought everything to go together, and when
we moved, it fitted in here.” The home has a lovely eclectic and
soothing flavour with an easy style that is perfect at Christmas time,
when extended family and friends visit. “We normally have seafood
and salads then pavlova, and sit on the deck and swim in the pool all
day with a few visits to the beach in between,” says Heidi. They’ll also
take advantage of the breeze by opening those French doors as they
do on most sultry Sydney summer days when this home truly sparkles.

STORY JACKIE BRYGEL STYLING JACQUI MOORE PHOTOGRAPHY ARMELLE HABIB
COSY CORNERS This inviting pocket of Kellie and Scott’s home is a perfect spot to chill, and Harvey the cavoodle gives it his stamp of approval (above left).
A ‘Smith’ sling leather chair by Barnaby Lane is the lynchpin of the comfortable space, which also features a chic Muuto ‘Around’ side table from Surrounding,
a Gubi ‘Grasshopper’ lamp from Cult and a graphic Pop & Scott plant pot. A colourful Lisa LaPointe ‘Totem’ print from Greenhouse Interiors takes prime place
on the wall above. Daylight pours into the foyer (above right) thanks to a spectacular wall of angled double-height glass. Stepping inside the home, guests are
greeted by an eye-catching display: dramatic painted branches by HK Living from House Of Orange double as coat and hat stands, while a ‘Rattan Hanging
Bowl’ hair and ‘Fern’ cushion, both also by HK Living, are layered with a luxe Icelandic sheepskin by Society Of Wanderers from Greenhouse Interiors. “Because
of the curved wall, we couldn’t hang art, so our stylist Jacqui Moore came up with the idea of the hanging chair as a feature,” says Kellie (pictured, above right).
And when the couple and their sons, Jack, 16, and Ben, 13 (pictured opposite), want to enjoy the Melbourne sun they can be found poolside. “A pool was on
our wishlist,” says Kellie, who is relaxing on a Fermob ‘Sixties’ bench seat from Classic With A Twist. “This is really such a wonderful summer home.” >
KITCHEN It’s no surprise that keen cook Kellie is in her element in this cutting-edge kitchen (above). Bright and beautiful, with a servery window
directly linking the food prep zone to the alfresco area (above right), the kitchen boasts a clean minimalist vibe thanks to a sea of white cabinetry teamed
with Caesarstone benchtops in Piatra Grey. “I went for reconstituted stone over a natural one because I love to cook, and I’m a messy cook,” says Kellie.
“I didn’t want to have to be thinking, ‘Oh no, I can’t put that down as I might mark the bench’.” Large-format, concrete-look Rex ‘Unique’ tiles from Urban
Edge – another robust low-maintenance choice – ground the room, and are carried through to the alfresco area. As for the adjustable Bonaldo ‘Clip’ bar
stools from Pad Furniture, Kellie particularly loves that they can be easily transported to the dining room and used as extra table seating, as required.

LIVING ROOM Switching into relaxation mode occurs instantly when
stepping down into the spacious sunken lounge. “As the block is on
a slope, we needed to split the level of this room, but it’s worked out
so well,” explains Scott. “The fact that it is sunken separates the area
without dividing walls.” An Olbia Pamir ‘Pebbles’ rug from Halcyon
Lake anchors the generous space, with a King Living modular ‘Jasper’
sofa – covered with ‘Oxford’ fabric in Steel – more than roomy enough
to accommodate the entire clan. A touch of greenery is introduced with
a ‘Chameleon’ plant stand by Ivy Muse with a ‘Modernist’ Pop & Scott

united with a duo of ‘Delta’ coffee tables from Huset.

< A happy union was soon formed between the couple and Finnis
Architects, as well as with building company Kennedy Constructions.
“We didn’t want to rush the process, as we wanted to be sure to get it
absolutely right, so we were in the design phase for 18 months, then
15 months for the build,” says Scott. Next, Kellie and Scott enlisted
the expertise of regular HB stylist Jacqui Moore, who guided their
selection of everything from the home’s eye-catching art and decorator
finds to the style-savvy yet made-for-comfort furniture. “Kellie and
Scott involved me just as the build was completed,” says Jacqui.
“I knew straight away the challenge would be making the most of the
house’s generous proportions, while also creating a welcoming family
home.” The process went so smoothly that Scott hasn’t ruled out doing
it all over again. Kellie, however, has other ideas. “We put so much
effort and care into creating this home – and it’s just perfect – so we’re
not going anywhere,” she says. Words that are no doubt music
to another pair of ears – those belonging to Harvey, of course.
LIVING ROOM A black butt panelled feature wall, with built-in gas fireplace
and TV (right & opposite), amps up the living room’s texture and warmth
quota, as does a chunky ‘Cloud’ blanket by Jardan. On one inky-hued wall,
an aquarium (below) is forever a talking point among guests. The Artemide

time to spruce up
Updating a timber vanity can do wonders for your bathroom,
and it’s easy to do too. “Sand it back and stain it, or paint it in
a pop colour to add a feature to the space,” suggests Carmel.
scrub-a-dub-dub
Whatever the state of your bathroom – retro horror story or
symphony in beige – there are only a few baths that can’t be
improved by a good clean. Grimy grout and insidious mould
are issues that can afflict even a well-scrubbed space. For a grout
solution that will cost very little time and some elbow grease, try
attacking it with a toothbrush and a mixture of bicarb and vinegar.
Mould is a different story. “I recommend getting a professional
clean done for mould, as it needs to be treated properly or it will
return in a matter of days,” says Carmel. Tile Rescue uses intensive
cleaning products to rejuvenate the look of your tiles and grout,
and seal them to keep them lovely.
Don’t forget your tapware. Dripping taps can stain your bath or
basin, but can be easily fixed with new washers – a straightforward
job for even first-time DIYers – while calcium and limescale look
yucky and can also affect the functionality of your shower rose. >

love. “Hide as much of the day-to-day stuff as possible,” says interior stylist and blogger at The Life
Creative, Chris Carroll. Pretty baskets are a catch-all for small items, a ladder looks wonderful as
a towel rail, and a butler’s tray is perfect for storing bits and pieces. “Keep the soap pump, jar of
cotton buds and toothbrush container all on the same tray,” says interior design Angela Steyn.
The steamy environment of a bathroom also makes this room a perfect canvas for plants. Use
lush greenery to add colour to a stark white space. Or, if space is at a premium, look up. “Consider
hanging a fern or succulent from the ceiling, or style some cacti on your windowsill,” says Chris. >

contemporary minimalism
A minimalist garden with a restrained palette pairs perfectly with bold
architecture, says Peta Donaldson of BLAC Design + Construction.
“The aim is to create balance in terms of scale, texture and layering so
the architecture and landscape sit in harmony,” Peta explains. “For front
paths I like to incorporate a blend of concrete and natural stone for
a subtle contrast, and cantilevered landings for a minimalistic, yet
dramatic impact.” For less maintenance, forgo lawn in favour of
gravel interspersed with giant organic stone steppers, or mass plant
a hardy groundcover like Dichondra repens for no-mow greenery.
A striking letter box is also a must. “Replicate a material used within
the architecture and introduce it into the garden,” says Peta. “This will
deliver a harmonious continuity between your landscape and your home.”

traditional weatherboard
A classic facade calls for equally timeless landscaping, says Sophie
Greive of Think Outside Gardens. “Cottage-style gardens complement
weatherboard homes, as this softer planting approach was often adopted
during the era they were built,” says Sophie. Think rambling garden
beds with flourishes of hardy perennials such as lavender, salvia and
iris; stepping stones; winding gravel paths; and wrought-iron furniture.
modern chic
With a trend to push to the boundaries, modern homes often benefit
from a savvy scheme which maximises a small frontage. “A pared-back
palette of plant species with simple, striking foliage is often best,”
says Lisa Ellis of Lisa Ellis Gardens. For pavers and pots, think big,
she says. “Large square concrete pavers or natural stone laid in
a geometric pattern create the impression of a larger footprint.”

PORK LOIN WITH APRICOT, SAGE & MACADAMIA STUFFING
Serves 8-10
Stuffing
75g butter
1 medium onion, finely chopped
2 garlic cloves, crushed
½ cup (85g) macadamias, finely chopped
½ cup dried diced apricots
2 tbsp thinly sliced sage leaves
2 tsp finely grated orange zest
2 cups firmly packed fresh breadcrumbs
Salt & cracked black pepper
Extra sage sprigs for garnish
Gravy
¼ cup plain flour
2 cups chicken stock
6. To serve, carve pork into thick slices and serve with potatoes,
gravy and garnish with extra sage.
WINE MATCH: 2015 Innocent Bystander Pinot Gris, Yarra Valley,
Victoria, $20
TIP: Find dried pink peppercorns in the herb and spice section
in gourmet fruit and vegetables stores. Or substitute with
black cracked pepper.
TIP: To store ham, dip a calico ham bag, clean fabric bag or
pillowcase in a solution of 2 cups water and 1 tbsp of white
vinegar. Squeeze out moisture, allow bag to dry then place
ham in bag. In three days, remove ham, repeat dipping
solution, return ham to damp bag and store for another four
days. After this time, remove any ham from bone and freeze. >
1. To make cider and mustard syrup, put cider, sugar and thyme
sprigs in a small saucepan over a medium heat. Stir until sugar
dissolves. Bring mixture to the boil and boil for about 12 minutes
or until reduced to a syrup (about half a cup of liquid). Discard
thyme and stir in mustard. Set aside to cool and thicken. (This
can be made up to 2 days ahead and stored at room temperature).
2. Preheat oven to 220°C. Trim just enough off the base of onions
so they still hold together. Peel outer layer leaving pointy end
attached, then cut onions in half lengthways.
3. Line two oven trays with baking paper. Spread onions, fennel
and pears on trays and spray liberally with oil. Roast for 30-35
minutes or until golden, turning pears and fennel over halfway.
4. To serve, transfer to serving platter drizzle with syrup and
sprinkle with thyme tips.
