It was my first restaurant visit during the covid19 pandemic. The first thing that wowed me
was the atmosphere and beautiful decoration. As the name suggests, it is located right on
the Miami river.
In keeping with regulations, the tables were set six feet apart from each other. Both the
staff and everyone not sitting at a table were wearing masks. The staff cleaned and replaced
tablecloths between sets of diners. Upon entry, our temperatures were taken, and no more
than four or five persons were seated at a table. Another safety precaution they took was
having the menus available via QR codes. We scanned it with a phone camera and a PDF
file of the menus would appear.
The open-air atmosphere made it a pleasant experience. From our table, we saw both
normal sized boats, and huge cargo ships pass by as they cruised down the Miami river. To
eat, I had seared tuna with a side of roasted mixed vegetables. The tuna was prepared
medium rare. Everyone at the table was talking about how flavorful the food was, and we all
agreed that it was some of the best restaurant food we had in a while.
Overall, my experience eating at a restaurant during a pandemic was positive. It gives
me a deeper appreciation for people who work in the service industry, and I thank them for all
that they do in trying to protect everyone.

Fried Rice

Ingredients:
 8–12 ounces shrimp  2 eggs, whisked with salt
 3 tablespoons oil, divided  3 cups cooked rice
 2 shallots, chopped  3 tablespoons soy sauce
 4 garlic cloves, chopped  1 1/2 tablespoons maple syrup
 1 cup mixed vegetables  drizzle of sesame oil
 1 cup red bell pepper, chopped  1/4–1/2 cup chopped scallions
 1 cup fresh shucked peas

Instructions:
1. In a wok, pan-sear your shrimp in oil with a little salt, pepper and chili flakes until
golden and cooked, set aside.
2. In the same wok, add 1-2 tablespoons of oil and sauté shallots, garlic, bell pepper
and veggies over medium heat. Season with salt.
3. At the same time, whisk the eggs with salt and scramble it in a separate oiled pan.
Break the scrambled eggs apart into little pieces, set aside.
4. Once the veggies are tender, scoot them over to one side of the pan. Add a little
more oil to the bare part of the pan and add the rice. Turn the heat up and fry for
3-4 minutes. Mix the rice with the veggies.
5. Drizzle with the soy sauce and maple syrup and mix well. Add the scrambled
eggs. Taste and season with a drizzle of sesame oil, chili flakes, salt and pepper
if needed. Stir in the scallions right before serving.
