Specialty tools needed in preparing egg dishes.

Channel Knife – a small hand tool used for making garnishes.

Omelet Pan- a Heavy-based frying usually of castiron or copper, with rounded


slopingsides used exclusively for omeletsand never washed after used butcleaned with absorbent paper.

Offset Spatula- a broad-bladed implement bentto keep the hands off hot
surfaces.It is used for turning and liftingeggs, pancakes, and meats ongriddles, grills, sheet pans and
thelikes and also used to scrape andclean griddles

Measuring Cup- a kitchen utensil used formeasuring liquid or bulk


solidcooking ingredients such as fleurand sugar
