Instructions:
1. Accomplish the activities identified below with the appropriate coaching and guidance from your BOTP coach
2. Your BOTP coach will tick the box as you perform each task.
3. Your BOTP coach will discuss your accomplishments and critical incidents at the end of the shift.

Service Area - Opening


OPENING THE SHIFT I F C CRITICAL INCIDENT
A. Safety and Security Check
Activities
Look for anything unusual before opening the restaurant. Inspect if
there is a sign of robbery of forced entry from the outside.

Check cleanliness and condition of outside premises and facilities:


sidewalk, signboard, glass panel, glass doors/roll-up.

Open the store in the presence of the guard and/or the crew
Open exhaust and turn on necessary lights and breakers, Check
condition of circuit breaker. Panels are properly labeled.

Open the Management Team (MT) office. Conduct visual check on


vaults and cabinets. Look out for any unusual security issues.
B. Opening Tasks
Check cleanliness and condition of the following areas: dining area,
restroom, utility room, and counter area
Check and turn on the following:

• POS units including printer and cash drawer

• Facility Terminals (Ex: Happy Plus , B-code terminals and


network)

• Translites, posters, and other merchandising program

• Necessary lights and breakers in the counter and dining area

• Sound system and at the right volume

• ACU and check restaurant temperature setting

Conduct opening procedures for applicable Business Channels

Gather relevant information such as:


• FSC Status
• Sales Trend
• Events within the RTA
• Bulk Orders, JKP
• Marketing Events, Promo
• Other endorsement from previous shift

Record all the observations made during the initial procedures using
the Management Activity Checklist (MAC) form

Give drawer fund to the opening cashier/s (if applicable)

C. Pre-shift Tasks

Read the MAP to check if there are any special events (ex: Bulk
Orders, JKP) or concerns that may need attention while running the
shift.

Make a quick assessment of the area or shift based from MAC:

• Make sure there is enough cash change especially before peak


periods

• Undercounter shelves are adequately stocked with packaging


supplies enough to meet peak demands.

• Make sure dining crew members know the “zones” they will be
attending to during operations especially during peak periods

RUNNING THE SHIFT I F C CRITICAL INCIDENT


Activities

A. Floor Control
Stay on floor.
Be observant on what’s going on and act on matters needing
Manager’s attention
Do travel path at least every 30 minutes
Give timely breaks to crew members based on prepared breaklist and
actual store hours worked
Check grooming and proper hygiene practice of crew (ex: washing
hands) while station
Conduct floor control in the service area

Perform cashier sign-on in the assigned POS

Perform transaction modification and cancellation (ex: modify/Void


orders, cancel a transaction, refund a transaction)

Perform discount in the POS (ex: employee discount,


Senior Citizen discount, Person with Disability (PWD) discount)

Perform cash pull-outs on the following situation:


- Drawer limit/ Cash pull-out
- Emergency Cash Pull-out from Sales
- Counterfeit/Fake and non-negotiable bills and coins

Perform Cashier log off and generate the cashier’s cut-off report

CLOSING THE SHIFT I F C CRITICAL INCIDENT

A. Pre-closing Tasks
Activities

Do the necessary cut-off and cashier’s clearing procedures

Close all dining areas not occupied by customers (JKP/Function areas, 2nd and
3rd floors
Leave enough dining area open for customers

Ensure that condiments’ dispenser are still available at the service station for
customers’ use
Read additional endorsements (if any) from the Managers on the FSC work-
book
Manage administrative pre-closing tasks

B. Closing Tasks

Conduct sales cut-off on closing cashiers and all applicable channels

Take the POS readings

Lock the front door upon the exit of the last customer

Supervise the cleaning of the counter, dining, JKP, DT, and JEDS area
(including motorcycles)
Accomplish the sales report

Audit MCF/ CDF funds

Ensure all sales packs are inside the drop-slot vault

Accomplish the SPL and DCPR

Perform data back-up procedure every 1st week of the month in the AMWS
