Chapter I
INTRODUCTION
Pastil or pastel, is a Filipino packed rice dish made with steamed rice wrapped in
banana leaves with dry shredded beef, chicken, or fish. It originates from the
Maguindanao and Cotabato people and is a popular cheap breakfast meal in Mindanao,
there where people have different ways of taking it in. According to Punzalan (2017)
pastil has continued its popularity even on Christmas among ordinary Muslims, even
Christians in most parts of Muslim Mindanao region. It’s a poor man’s instant food and
you can have it anywhere in areas where Muslims dominate. In Manila, according to
Polistico (2010) it is sold and readily available in the ubiquitous Halal restaurants and
eateries near the Golden Mosque in Quiapo district and in Maharlika Village in Taguig
City.
Although Pastil not originally a Maguindanaon delicacy, the Maranaos have their
own ersion of Pastil as well. According to Mamaisanged (2017) the Maranaos who
originated from Lanao del Sur and are ideally known for being into business related
matters had brought their version of Pater (also known as paster or pastil) to Cagayan
de Oro City. Their version of Pater is it’s made of rice (usually yellow rice) topped with a
tasty dish could be beef, chicken or fish. These three flavors don’t come together, they
are served separately such as randang (beef or chicken randang), and bakas or fish
with yellow coconut meat. It is then wrapped around using banana leaves to keep it out

up with the saturation point of the total respondents. Before conducting the interview,
the cover letter with the approved signature was presented to the chosen respondents

researcher asked them if they could answer the queries in the interview guide. The
researcher conducted a face-to-face interview with the manager to facilitate the creation
of rapport, comprehensiveness of answering questions and allow probing. After that, the
researcher summed up the data gathered from the respondents and interpreted it with
