● The identified food hazard in this issue is Chemical Hazard.

● The alleged contaminated milk is said to have been distributed under a feeding
program. Coordination with the local government, the National Dairy Authority,
and concerned agencies for the investigation of the incident and analysis of milk
samples had already been initiated, DepEd noted. Initial investigation of the
agency revealed that “majority of the affected learners experienced mild
illnesses, including dehydration and nausea”. Incorrect processing or storage of
dairy products can represent a transmission hazard for a large number of
pathogens and can be responsible for outbreaks of brucellosis, listeriosis,
tuberculosis, etc.

Dairy farm chemicals keep equipment clean and animals healthy on many modern dairy
farms. But when mishandled, they can lead to the contamination of milk and milk
products. Dairy cross-contamination can cause health problems for farmers, animals
and milk consumers.

In general, consider these steps to help keep dairy farm cleaning chemicals from being
a source of milk contamination:

● Monitor and document chemical use


● Follow label instructions and dairy best management practices
● Conduct regular, frequent inspections of farms and animals
● Train workers on how to properly handle and administer chemicals on the farm
● Update protocols regularly based on chemicals used
Pre-milking practices should include the following steps of routine udder preparation
procedures:

● Use a clean paper towel or washing cloth for each cow:


○ Thoroughly wash udders using clean water with an added
disinfectant, such as sodium hypochlorite
○ If water becomes dirty, empty the container and fill with new
○ Once udder is washed and clean, dry udder to avoid contaminated
water from leaking into teat cups
○ Used paper towels should be thrown away
○ When a wash cloth is used, they should be disinfected and dried
before being used again in the next round of milking
● Wash hands with soap and hot water before and after handling food, and after
using the bathroom, changing diapers; or handling pets.
● Use hot, soapy water and paper towels or clean cloths to wipe up kitchen
surfaces or spills. Wash cloths often in the hot cycle of your washing machine.
