INTRODUCTION
RATIONALE:
Mocktail is an acronym for "mock cocktails," a non-
alcoholic drink that made up of infused waters, juices, sodas,
cream, salt, mint leaves, honey, milk, and other interesting
components (Escoffeir School Of Culinaty Arts). Although
commercial juices may include unhealthy added sugar and
preservatives, fresh ingredients can be added to increase the
drink's quality. They are intended specifically for non-
drinking children, teens, and adults. Mock-Cocktail was first
served at parties and festive events. They're so popular these
days that you'll find them in practically every hotel,
restaurant, pub, and club on the planet. Mocktails are ideal
for designated drivers, work lunches, and even dinners
because they are made expressly for folks who do not consume
alcohol. It is also a popular alternative to alcoholic drinks
for many people because it is perfect for getting into the
spirit of a get-together or a party without the next day's
hangover. Making a mocktail or cocktail is an art form, and
many bartenders and mixologists spend countless hours
attempting to come up with a novel flavor or the next big
mix. Mixologist classes are cropping up all over the world as
a result of the mixing obsession. (BMI Research, 2016).
Creatively, the researcher wants to take it to the next
level and make a new type of mocktail using butterfly pea
flower extract and introduce a free alcohol drink. According
to Eisen, Emily (2015) the butterfly pea flower (Clitoria
ternatea) originates from subtropical regions and is widely
distributed in Africa, Asia, Australia, North America, South
America, and the Northwest, Central South, and Southwest
Pacific. Statista (2017) stated that butterfly pea, like vine
plants, is a perennial climbing plant or herbaceous plant. It
is self-pollinated and spreads by seeds. It prefers moist and
neutral soil (pH 5.5 to 8.9). From Sci. Pharm. (2018) added
that butterfly pea flower is an axillary, solitary, or twin
flower. It is harvested in summer. The most apparent feature
of the butterfly pea flower is its dark blue petals with a
yellow mark. According to Zakaria et al. (2016) the flavonoids
found in the butterfly pea flowers can reduce infections in
the upper respiratory tract. They have been proven to be anti-
inflammatory in animal tests and have antioxidative power.
Butterfly pea flowers contain about 0.9 mg ash, 8.94 mg
soluble minerals, 41.27 mg crude protein, and 29.18 mg soluble
carbohydrate per 100 g of dry weight.
Hence, for ages, the National Archives Code of Federal
Regulations, (2021) the brilliant blue petals of the
butterfly-pea plant's blooms have been utilized as a
component in herbal tea drinks and in cookery throughout the
region. The Butterfly Pea flower has a vivid blue color when
steeped in boiling water, which sets it apart from other teas.
When lemon or another sort of acidity is added, the tea
changes color from blue to vivid violet. The lemon alters the
pH of the tea, resulting in the color change. This unique
quality has led to Butterfly Pea becoming quite popular around
the world, and even becoming a staple for expert mixologists
and chefs who use it to shock patrons with naturally color
changing cocktails or brightly colored foods.
Furthermore, to unlocked the creativity and born a new
non-alcoholic drink using the butterfly pea flower extract,
this study was made to illustrate the ingredients and process
involved in the preparation of mocktail drink using butterfly
pea flower extract, validate the acceptability of mocktail
drink with extract in terms of taste, aroma, appearance and
promote the benefits drawn from this developed mocktail.
Finally, it will soon serve for a healthier drinking
lifestyle.
OBJECTIVES:
This study will focus on the preparation of developed
mocktail drink using butterfly pea flower extract.
Specifically, it aims to answer the ff. objectives:
1. To illustrate the ingredients and process involved in
the preparation of mocktail drink using butterfly pea
flower extract.
2. Validate the acceptability of mocktail drink with
extract in terms of:
a. Taste
b. Aroma
c. Appearance
3. Determine awareness of respondents toward the
benefits of developed mocktail with butterfly pea
flower extract.
EXPECTED OUTCOME AND BENEFICIARIES:
The expected outcome of the study is to assess the
acceptability in the market of mocktail drink using butterfly
pea flower extract. The result of the study will be beneficial
to the following:
• Market Consumers – Encouraged to make or buy
healthy non-alcoholic drink to quench the thirst of
their children and family members.
• Entrepreneurs – Help them to start a health-
conscious business promoting a healthy lifestyle.
The product can be sold at affordable price with
excellent quality.
• Teachers – This will help the teachers to gain
information’s about the benefit of the product and
may share it to their students.
• School Administrators – It is an avenue to promote
natural and healthy lifestyle for school staff,
parents’ association and the school itself.
• Future Researcher – This will serves as a stepping
stone to continue and dig deeper study about
innovating mocktails that uses extract of herbs.
MATERIALS AND METHODOLOGY
This presents the research design, research instruments,
research respondents, statistical treatment, materials used
in the preparation, methods in preparation, test and revision
and validation of the product.
RESEARCH DESIGN
The study was utilized descriptive and quantitative
research design. Descriptive design was used to described the
ingredients and process involved in making of the product,
and benefits of the product. Quantitative approach was used
to determine the acceptability in the market of mocktail drink
using butterfly pea flower extract in terms of taste, aroma,
and appearance and to determine awareness of respondents
toward the benefits of developed mocktail with butterfly pea
flower extract.
RESEARCH INSTRUMENT
The researcher used a researcher-made structured survey
questionnaire that has two parts, in the first part found the
name, age and gender and the evaluation form to validate the
acceptability of the product in terms of taste, aroma,
appearance and determine the awareness of respondents toward
the benefits of developed mocktail with butterfly pea flower
extract. The following scale was used to indicate the rating
of the evaluators such as excellent 5 like very much, 4 like,
3 either, 2 dislike and 1 as dislike very much. Another set
of questionnaires with descriptions was used to determine
awareness of respondents toward the benefits of developed
mocktail with butterfly pea flower extract with rating scale
of Yes or No.
RESPONDENTS OF THE STUDY
The respondents of the study were selected using random
sampling within vicinity of researcher’s address and
conducted pre-survey to (5) adults, (5) youth, (5) teen and
(5) children. Therefore, there is 20 total respondents in
this study.
STATISTICAL TREATMENT
The researcher was used Average Weighted Mean as
statistical tool to compute for the acceptability of the
product in terms awareness of respondents toward the benefits
of developed mocktail with butterfly pea flower extract. The
formula of weighted mean is indicated below. There were two
(2) statistical tool used to treat the gathered data. These
were Weighted Mean and Percentage.
Weighted Mean. This was used to treat the data for the given
questionnaire. A five point scale will be used to described
the perception of the evaluators. The weight and equivalent
interpretation will be:

In order to draw the weighted mean, the formula below will be
used:

Mw = weighted mean
Σ = summation
f = frequency
x = total number of respondents
Percentage. The frequency per item will be multiplied by 100
then divide by the total number of respondents. The formula
is:
P = f/n x100
Where:
P = percentage
f = frequency
n = total number of respondents

Step 1: Prepare all the ingredients.
Step 2: Wash the butterfly pea flowers and lemon.
Step 3: Remove the flower tops and put it in a mug.
Step 4: Pour out hot water. Wait 3-5 minutes until the water
turned to color blue and set aside the extract.
Step 5: Layer the honey syrup, extract, sprite soda, Gatorade,
ice cube to extract and top the slice lemon.

DEFINITION OF TERMS
Acceptability - It refers to the satisfactory of the product
in terms of taste, aroma, appearance and benefits.
Aroma - A distinctive smell of mocktail using butterfly pea
extract.
Appearance - A characteristic of visual perception of Pink
mocktail using butterfly pea extract.
Benefit - something that produces good or helpful results or
effects or that promotes well-being.
Butterfly Pea Flower – is a common ingredient in many herbal
teas, mixed drinks, and cosmetic products.
Extract – left over blue water after removing the flower.
Honey Syrup - a simple syrup made with honey.
Market – a place where buyers and sellers can meet to
facilitate the exchange or transaction of goods and services.
Mocktail – a iced nonalcoholic drink from refused fruits and
other ingredients.
Non-alcoholic - alcohol-free or non-alcoholic drink, also
known as a temperance drink
Taste – The savory flavor of the developed mocktail.
IV. RESULTS AND DISCUSSION
Objective 1. To illustrate the ingredients and process
involved in the preparation of mocktail drink using butterfly
pea flower extract.
Ingredients:

2 shot glass of extract
1 shot glass sprite soda
1 shot glass Gatorade
2 tablespoons of Honey syrup
2-3 pcs. Ice Cube
Procedures:
1. Prepare all the ingredients.
2. Wash the butterfly pea flowers and lemon.
3. Remove the flower tops and put it in a mug.
4. Pour out hot water. Wait 3-5 minutes until the water
turned to color blue and set aside the extract.
5. Layer the honey syrup, extract, sprite soda, Gatorade,
ice cube and top the slice lemon.
