Filipino cuisine has one of the lowest preference scores worldwide according to surveys. There are several factors for this, including ingredients that are difficult to find outside the Philippines so tastes are unfamiliar, and a lack of agricultural support and marketing to promote dishes globally. The cuisine has been influenced by other cultures like China, Japan, Spain and Malaysia which has led to a unique blend but one that is complex to describe. Improving the agricultural sector, exporting ingredients, and promoting Filipino restaurants abroad may help increase awareness and appreciation of its culinary traditions.

I.

Introduction

Eating is one of the means on how people can survive in

their everyday lives. Many people are fond of eating, especially

the Filipinos. We may vary in different cuisines, but these

variations just put us together. As a research was conducted,

percentage of food cuisines are also seen, and Filipino cuisine

do have the least preferred score. Italian cuisine got the

highest score (84%), followed by Chinese (78%), Japanese (71%),

Thai and French (70%). Factors affecting the low score Filipino

cuisine got are also discussed, like ingredients used in

Filipino cuisines are hard to export outside the country so

people from different country will not be familiar with the taste

of the ingredients used in cooking the food. According to Mark

Sarthou, a chef and a cookbook author, the Filipino cuisines does

not merely mix and match ingredients and different cooking

methods of foreign dishes. One must also understand how

the “perspectives and philosophies” of various cultures blend as

well. Sarthou also quote that the country lacks the “marketing

and business acumen” required to make local dishes popular in a

global sense, as well as the Philippines’ lack of support in the

agricultural sector. It is said that for a cuisine be popular to

other people of different countries we should lean on Philippines

strong agricultural sector but unfortunately the country does not


possess this. This makes the Filipino cuisine difficult to

describe in just a line or two. The effects of these factors in

voting for each’s preference are also discussed. This, article

aims to identify the factors affecting the score of Filipino

cuisine, for being the least preferred among the rest.

II. Objectives of the Case Study

1. To determine the factors affecting the rate of preference of

Filipino cuisine

2. To know the reason why Filipino cuisine got the least

preferred rank among worldwide

3. To determine the countries that have a high preference score

III. Presentation of the Case

The given case is about the Filipino cuisine being one of

the least preferred cuisine worldwide. Our culture is not

homogenous compared to other countries. Let us say, Japan, our

food must be presented differently, perhaps by region. Take the

case of Singapore, they have diverse culinary traditions:

Hokkien, Cantonese, Teochew, Peranakan, Malay, South Indian and

Eurasian, and yet, they’re able to articulate and present their

food in a culturally cohesive manner. We must also be aware of

our ignorance and bigotry with regards to the food of other


regions. If one entity proclaim that a particular province is the

“culinary capital” of the Philippines, that is simply showing

arrogance and disregard for the other great culinary traditions

of the country. Perhaps we should be more aware of our cultural

differences and try the food of the provinces other than ours,

and embrace the food of the more than 80 ethno-linguistic groups

of the country, then we will not be ignorant of our culture.

According to Unilever Food Solutions our approach to food changed

drastically with influences from trade and conquest. Basically,

for the Chinese, it was the noodles. The Japanese brought the soy

sauce. The Malays introduced their spices through trade. And with

the length of their stay, it was the Spaniards who influenced our

food the most in their way of cooking and their ingredients.

Philippine cuisine has several foreign influences that have

successfully melded with local, indigenous cuisine. This are the

cause why Filipino food have a unique taste which are not

favorable by the other people in different countries. With the

influence of countries especially those who colonized the

Philippines; they have a large contribution in developing

Filipino cuisines.

Filipino cuisine’s history can be a big contribution for its

low preference but there are still factors contributing to it

like some of the ingredients used can only be found here in the
Philippines and is not present outside the country that’s why the

taste of it will not be familiar to others and probably they

wouldn’t like it. The Philippines also do not have a good

marketing and business acuity that may push it to its popularity

so that different dishes from the Philippines will be known and

different nationalities will be familiar with these.

Today with the help of different restaurants outside the

country that provides and offers Filipino cuisine it will be

easier for the people around the globe to also embrace it. Also,

Philippines is now developing a good business skill where they

can also now trade ingredients, and other spices with other

countries. Agricultural sector of the Philippines also starts to

grow that is why they can now be a great foundation in improving

the Filipino cuisines. With these we can now have our progress

and be one of those countries that have high preference score.

IV. Proposed Solutions and Recommendations

1. The factors affecting the least preference of Filipino

cuisine should be evaluate and analyze

2. Know what kind of cuisine do have high preference and

compare it with the Filipino cuisine

3. Learn to popularize the ingredients which are all from

Philippines
