Bar Tools, Equipment and Glassware


Learning Outcomes:

After discussing this unit, the students should be able to:

 Learn the equipment and its placement or layout in the bar;


 Learn different tools used in preparing and serving the drinks in a bar;
 Learn the different types of glassware, proper handling and care.

A. Bar Tools
1. Tools for mixing, pouring, and garnishing drinks

a) Bar caddy – is used in storing bar supplies and decorations


b) Bar knife – is used to pick ingredients and in cutting and slicing
c) Bar spoon – is used for picking up, measuring ingredients and in stirring cocktails
d) Bar strainer – is used for straining drinks after mixing
e) Cocktail shaker – is used for mixing cocktails by shaking
f) Cutting board – is used to cut fruits slices and garnishes
g) Fruit squeezer – is used for squeezing fruits to extract the juice
h) Funnel – is used to transfer contents from one container to another container
i) Garnishing caddy/tray – is used in storing garnishes for easy access
j) Glass rimmer – is used to rim or frost the rim of the glass with sugar or salt
k) Ice pick – used for breaking packed ice or block of ice
l) Ice scoop/shovel – is used for picking up ice in large quantity
m) Ice tong – is used for picking ice cube individually
n) Jiggers – is used for measuring ingredients in preparing and serving drinks or cocktails
o) Liquid measuring cup – is used to measure liquid ingredients in large quantity
p) Measuring spoon – is used for measuring liquid and powdered ingredients
q) Mixing glass – is used for mixing cocktails by stirring
r) Muddler – is used to press or muddle ingredients to extract flavour and aroma
s) Nutmeg grater – is used in grating nutmeg
t) Pourers – is used to control/regulate the flow of drinks during pouring
u) Zester/router/stripper – is used in stripping skin of fruits for garnishing

2. Tools for serving drinks

a) Bottle and can opener – are used to open bottle or cans


b) Coaster – is used as underliner in serving chilled drinks
c) Cork screw – is used to open bottle of wine stoppered with cork
d) Folio or tip tray – is used to collect payments from the guest
e) Ice bucket – is used in serving ice to the guest table
f) Picks – is used for picking garnishes to be placed in the drink
g) Round tray – is used to serve drinks to guests’ table
h) Stirrer/swizzle stick – is used for stirring drink
i) Wine bucket – is used to chill and maintaining the coldness of the wines served to the guests

To be good at anything, you need the right tools – bartending is no different.


Without the right bar tools, the quality and taste of your drinks will suffer, your customer
service time will increase and ultimately, your tips will decrease (as will sales).

Objective:

This exercise will provide students with ideas and knowledge about the different tools that is
being used in the bar. This will also help them to learn the proper uses and functions of the given bar
