Tansy pudding

2 oz ground almonds
4 oz castor sugar
2 oz butter
3/4 pint double cream
3 eggs
6 slices white bread without crusts
4 sprigs tansy herb

Bring cream and butter to boil


Beat eggs with sugar
Pour cream over eggs and mix in quickly
Pour mixture over breadcrumbs and ground almonds
Put into buttered ramekins and garnish with flaked almonds

Cook in a tray with a little water at 150C for 20-30 min


Serve with clotted cream, perhaps with mincemeat in
Garnish with sprigs of tansy if desired
