CHAPTER II. ANATOMY AND PHYSIOLOGY OF FARM ANIMALS

ANATOMY refers to the science that deals with the form and structure of animals. 

PHYSIOLOGY deals with the study of functions of the body or any of its parts. A thorough knowledge of
the structure of an animal imparts a lot of information about the various functions it is capable of
performing.

Technical Terms for Farm Animals

 Ovine – sheep (wool, meat, dual, dairy)


 Caprine – goats (fiber, meat, dairy)
 Porcine – pigs (meat, lard)
 Equine – horses & asses (ponies, light, warm-bloods, draft, donkeys)
 Poultry – chickens & turkeys (layers & broilers)
 Waterfowl – ducks & geese
 Lagomorphs – rabbits
 Bovine - cattle

General Terms

 Breed – a stock of animals within a species having a distinctive appearance and typically having
been developed by deliberate selection
 Breeding animal– an animal caused to produce offspring typically in a controlled and organized
way
 Dam – a female parent
 Flock – a grouping of a species of livestock (sheep, poultry)
 Herd – a group of a single species of animal (cattle, horses, swine, goats)
 Livestock – domestic farm animals kept for productive purposes (meat, milk, work, wool)
 Market animal – livestock bred and raised for food consumption
 Polled – a naturally hornless animal
 Sire – a male parent
 Litter – multiple offspring produced at one birth by a multi-parous mammal, also called brood

Chickens

 Chick – a newly hatched or a very young chicken

 Broilers – a chicken that is six to 13 weeks of age used for meat production
 Pullet – a young domestic hen, usually one that is less than one year old
 Hen – an adult female chicken
 Cockerel – an young male chicken
 Rooster – an adult male chicken
 Popular Products – eggs and chicken

Cattle

 Bovine – the scientific name for cattle


 Calf – a sexually immature young bovine
 Heifer – a young female bovine which has not yet had a calf
 Cow – a mature female bovine
 Steer – a castrated male bovine
 Bull – a sexually mature male bovine
 Popular Products – milk, beef and leather

Goats

 Caprine – refers to animals in the goat family


 Kid – a young goat
 Wether – a castrated male goat
 Doe – (aka. nanny) a female goat
 Buck – (aka. billy) a sexually mature male goat
 Popular Products – milk,* cabrito,** mohair and cashmere
 *Goats are the number one producer of milk in the world
 ** Goat meat has many different names that depend on the goat’s geographic location and age
of animal

Pigs

 Swine – a refers to animals in the pig family


 Barrow – a young, castrated male swine
 Boar – a sexually mature male swine
 Gilt – a young female pig
 Hog – a mature swine (usually weighing more than 120 pounds)
 Pig – (aka. piglet) a young swine (usually weighing less than 120 lbs.)
 Sow – a mature female swine

Sheep

 Ewe – a female sheep
 Lamb – a sheep less than one year in age
 Ram – a male sheep
 Wether – a castrated male sheep
 Popular Products – lamb,* mutton,* hogget,* and wool

Turkeys

 Poult – is a young domestic turkey


 Hen – an adult female turkey
 Tom – is a male turkey

Rabbit

 Stocker - weaned cattle that are run on grass or fed on a high roughage diet
 cow-calf operation - a management unit that maintatin a breeding herd of cows and produces
weand calves for sale.
 Crossbred - an animal that is a product of the crossing of 2 or more breeds
 feeder cattle - those requiring more growth and/or fattening before slaughter
 feedlot - beef cattle enterprise where cattle are placed in confinment, fed harvested feeds &
fattened for slaughter
 seedstock producer - enterprise that produces breeding animals for the commercial segment of
the industry. the majority of purebred breeders fall into this category
 fleece - wool from sheep
 mohair - fiber from an agora goat
 flock- herd of sheep or goats
 chevon - meat of goats
 mutton -meat from a sheep over a year of age
 prolificacy - ability to produce multiple offspring in a timely fashion
 boar- male of breeding age, young male are called boar pigs
 farrow to finish operations - a management unit that maintains a sow herd and carries the
production through to market weight
 feeder pig - a weaned pig that is ready to finish for slaughter

number in the left ear
 hybrid breeding stock - not a purebreed bred, but used as foundation breeding stock in
commerical swine production. developed by crossing purebreds of various breeds and then
multiple hybrid line
 needle teeth - 8 very sharp teeth in swine that are usually cut off in 1-3 days old
 spent hen - a hen that has completed her laying cycle and is ready for market as a stewing hen
 ovipostion - egg laying process
 ad libitum - allowing animals to eat all they want at all times
 a.i. - artifical insemination
 anestrous period - the time when a female is not in estrus. the non-breeding season
 breed - animals having a common origin and characteristics that distinguish them from other
groups within the same species
 calorie - the amount of heat required to raise the temperature of one gram of water from 15
degrees to 16 degress C
 clone - an individual grown from a single somatic cell of its parent and is genetically identical to
it
 colostrum - the first milk given by females following delivery of her young. contains high levels
of which are absorbed by the young for quick immunity
 compensatory growth - increased growth rate in response to previous undernourishment
 concentrate - a feed that is high in energy, low in fiber content, and highly digestable
 cull - to eliminate from the breeding population
 dry - refers to a non lactating female
 estrus synchronization - controlling the estrus cycle so that a high % of the females in the herd
express estrus at the same time
 estrus of heat - the period of mating activity in the female
 fertility - the capacity to initiate, sustain, and support reproduction
 fill - the contents of the digestive tract
 gestation period - term of pregnancy
 roughage - a feed that is high in fiber, low in digestable nutrients, and low in energy. such feeds
as hay straw, silage and pasture are examples
 T.D.N - total digestive nutrients. includes the total amounts of digestable protein, nitrogen free
extract, fiber and fat (multiplied by 2.25) all added together. approximates energy content
 Weaning - taking a young animal from its mother
 carcass merit - the value of a carcass for consumption
 contempory group - a set of animals of the same sex and breed that have been raised under
similar and management conditions
 dark cutter - color of the lean in the carcass. has a dark apperance usually caused by stress to
the animal prior to slaughter
 dystocia - difficult birth
