REDUCTION

1. In a quality control test, viscosity of a liquid food is being measured with a viscometer. A
shear stress of 5 dyne/cm 2 at a shear rate of 100 s -1 was recorded. Calculate the viscosity
and express it as Pa.s.

2. What is Newtonian fluid? Plot a graph to aid your explanation. (5 marks)

3. Whole milk is flowing into a pipe through a full 7.5 cm diameter pipe at a velocity of 0.5
ms-1. Calculate the velocity (in ms-1) of milk if it is transferred through a 3 cm diameter
pipe? (3 marks)

4. A 2.5 cm inside diameter pipe is being used to pump liquid food into a buffer tank. The
tank is 1 m diameter and 2.5 m high. The density of the liquid is 1025 kg/m 3 and
viscosity is 1600 x 10 -6 Pa s. What is the minimum time to fill the tank with this liquid
food if it is flowing under laminar conditions in the pipe? (5 marks)

5. A 2.5 cm diameter pipe is 15 m long and delivers water at a rate of 60 L/min at 25°C.
What fraction (in %) of the pipe represents the entrance region? (4 marks)

6. Olive oil with a specific gravity 0.93 is flowing in a pipe of 2 cm diameter. Calculate the
flow rate of the olive oil, if an orifice is placed in the pipe so that the diameter of the pipe
in the constriction is reduced to 1.1 cm, and if the measured pressure difference between
the clear pipe and the most constricted part of the pipe is 10 cm of water. (6 marks)

7. A tomato juice is being pumped at 27°C from an open tank through a 1.5-in nominal
diameter sanitary pipe to a second tank at a higher level. The mass flow rate is 2 kg/s

through 50 m of straight pipe with three regular 90°, threaded elbows and two globe (fully
open) valve. The supply tank maintains a liquid level of 3 m and the apple juice levels the
system at an elevation of 14 m above the floor. Compute the power requirement of the
pump. Assume that the sanitary pipe exhibit smooth pipe characteristics. (12 marks)

7. Food is milled from 7 mm to 0.0015 mm using a 12 hp motor. Would this motor be
adeqyate to reduce the size of the particles to 0.0008 mm? Apply Rittinger’s equation to
solve this problem. Given 1 hp = 745.7 W. (4 marks)

8. Explain about hammer mill and roller mill. (4 marks)
