Muffin Recipe

Ingredients

* 2 cups of self-raising flour

* 4 eggs

* 250g butter

* 1 tbsp vanilla essence

* 1/3 cup milk

* 1 cup sugar

Method:

Mix butter and sugar till light and fluffy.

Add beaten eggs.

Add flour.

Add vanilla essence and milk.

Beat till well mixed.

Bake at 180 degrees Celsius

NB: If you're using cake flour: 1 cup = 1 tsp baking powder.

Therefore 2 cups cake flour = 2 tsps Baking Powder.

Scones Recipes

Ingredients

* 4 cups of cake flour

* 4 tsps Baking Powder

* 250g cold butter (cubed)

* 1/2 cup Castor Sugar

* 1/2 tsp salt

* 1/2 cup Clover Classic Custard

* 1/3 cup Amasi

* 2 large eggs (whisked)

* 1 tsp Vanilla Essence

Method:

Preheat the oven to 180 degrees Celsius.

Mix flour with baking powder and salt.


Mix cubed butter with the flour until it resembles bread crumbs, then add in the sugar.

In a separate bowl, mix the Clover Classic Custard, Amasi, eggs and Vanilla Essence together.

Add the mixture to the flour and mix until well combined.

Press the scone dough and cut into equal sizes.

Brush over the egg wash and bake for 5-20 minutes until golden brown.

Easy Cup Cake Recipe

Ingredients

* 1 1/2 cup flour

* 2 tsp baking powder

* 2/3 cup sugar (reduce if you don't like them sweet)

* 2 large eggs

* 1/2 cup oil

* 1/2 cup milk

* 1 tsp vanilla essence

Method:

Preheat oven to 180 degrees Celsius.

Line baking tin with paper cups.

Sift flour and baking powder together.

Add sugar.

Whisk all wet ingredients and add to dry ingredients.

Fill cupcakes to 3/4 and bake for 15 minutes.

BREAD

Ingredients

 2 cups warm water 110 degrees F/45 degrees C

 1/2 cup white sugar

 1 1/2 tablespoons active dry yeast

 1 1/2 teaspoons salt

 1/4 cup vegetable oil

 5-6 cups flour  You can use all-purpose flour OR bread flour!


Instructions

1. In a large bowl, dissolve the 1 TBSP of the sugar in warm water and then stir in yeast. Allow
to proof until yeast resembles a creamy foam, about 5 minutes.

2. Mix remaining sugar, salt and oil into the yeast. Mix in flour one cup at a time. Dough should
be tacky and clean the sides of the bowl save for a small part at the bottom. Too much flour
added in yields a dry loaf of bread, so if you're worried you added too much, add a bit more
hot water, until you get the correct consistency.

3. Knead dough for 7 minutes. Place in a well oiled bowl, and turn dough to coat. Cover with a
damp cloth. Allow to rise until doubled in bulk, about 1 hour.

4. Punch dough down. Knead for 1 minute and divide in half. Shape into loaves and place into
two greased 9x5 inch loaf pans. Allow to rise for 30 minutes, or until dough has risen 1 inch
above pans.

5. Bake at 350 degrees F (175 degrees C) for 30-40 minutes. Cool, brush with butter and enjoy!

Notes

Recipe yields 2 standard loaves of bread
