POL (Polarization) - The value determined by direct or single polarization of the normal
weight sugar solution in a saccharimeter. The term is used in the calculations as if it were a real
substance.
SUCROSE
TURBIDITY - The light scattering resulting from the difference between the refractive
indices of suspended materials and the sugar solution.
MOISTURE - The loss in weight due to drying under specific condition, expressed as a
percentage of the total weight

ASH - The residue after burning off all the organic matter by incineration

REDUCING SUGAR - The reducing substances in cane and its products, calculated as invert
sugars: glucose (or dextrose) and levulose (or fructose): identical to invert sugars
INVERT SUGAR - The mixture of equal parts of glucose (or dextrose) and fructose (or
levulose) resulting from the hydrolysis of sucrose.

FIRST EXPRESSED JUICE - Juice expressed by the 1st two rollers of the tandem also called
crusher juice
MIXED JUICE - The mixture of primary and secondary juices sent from the mills and / or
diffuser to the boiling house.
LAST MILL - The combined juice expressed by the last mill of the tandem.
MACERATION - The process in which bagasses is steeped in an excess of water of light juice,
generally at a high temperature. It is used loosely as an alternative to imbibition.
MAGMA - A mechanical mixture of sugar crystals and liquor (syrup, sometimes clarified juice
or high-grade molasses), used as seed or footing in boiling massecuites.
MASSECUITE - The mixture of sugar crystals and mother liquor, crystallization having occured
in the mixture.
SEED- The magma or fine grained massecuite used as a footing for boiling massecuite.
T.S.I. Total sugar as invert-The sucrose and the reducing sugars, all expressed as invert sugars.
