    INTRODUCTION OF THE
    LESSON
    • It is important to clean,
    sanitize and store equipment
    properly for us to avoid
    bacteria from penetrating or
    accidents. Cleaning and
    sanitizing the equipment is
    essential because it helps us
    to be more secured, far from
    bacteria and others causes
    of illnesses.
    Terminologies
    Cleaning chemicals
    • These are compounds that are used to get
    rid of dirt, dust, blemishes, bad scents and
    clutter on surfaces. It is usually in the forms
    of liquid, powder, spray or granule.
    Cleaning
    • It is the process of removing unwanted
    substances, such as dirt, infectious agents,
    and other impurities, from an object or
    environment.
    Sanitizing
    • It is the process of cleaning something to
    make it free of bacteria or diseases causing
    elements.
    Types of Cleaning Agents
    1.Detergents
    These are the most common type of
    cleaning agents used in breaking up dirt
    or soil, making it easy to wash dirt away.
    It is usually used in home and commercial
    kitchens. It is usually synthetic detergents
    made from petroleum products and may
    be in the form of powder, liquid, gel or
    crystals.
    Example : Pride power wash , Champion
    Infinity , Tide Ultra, Bonus Lavender
    Detergent Powder and Ariel Detergent
    Powder

    Types of Detergents
    • 1.Anionic detergents
    • 2. Cationic detergents
    • 3. Non-ionic and zwitter ionic detergent
    2.Degreasers
    It is sometimes known as solvent
    cleaners and is used to remove
    grease from surfaces such as oven
    tops, counters and grill
    backsplashes.
    Example: vinegar, lemon juice,
    cornstarch , borax , baking soda
    and castile soap
    Types of Degreasers
    Environmentally Compatible
    Degreasers

    • Ammonia –based Degreasers


    • Liquid Degreasers
    • Foam Degreasers
    • Powder Degreasers
    • Petroleum-based Degreasers
    • 3.Abrasives
    These are substance or chemicals that depend
    on rubbing or scrubbing action to clean dirt
    from hard surfaces. In commercial kitchens,
    abrasives are usually to clean floors , pots
    and pans. It should be used with care as they
    may scratch certain types of materials used
    for kitchen equipment such as plastic or
    stainless steel
    Examples of Abrasives
    • Fine plastic mesh pads , nylon, coated
    • sponges , fine brass wool , rotten –
    stone
    • and whiting.

    Types of Abrasives
    • 1.Natural abrasives
    • 2. Manufactured
    • 4.Acids
    These are the most powerful
    type of cleaning agent and should
    be used with care. If they are not
    diluted correctly, acid cleaners
    can be very poisonous and
    corrosives. These are generally
    used to remove mineral deposits
    and are useful for descaling ,
    dishwashers or removing rust
    from restroom facilities.

    Examples:
    • Strong acid : hydrochloric acid (
    used as a tin soldering flux )

    • Mild acid: vinegar ( acetic acid) ,


    lemon juice ( citric acid)
