Happy Soup
3 Cups carrot juice
1 Small, ripe avocado
1/3 Cups coconut pulp
¼ Cups lime juice
2 Tablespoons agave
nectar
1 Tablespoon minced
ginger
¼ teaspoon cayenne
¼ teaspoon salt
Lime and cilantro for
garnish!

1. Blend until smooth


2. Garnish and serve

Carrot Wonder Soup
3 Cups chopped
carrots
2 Cups purified water
2 avocados
1 teaspoon cumin
1 teaspoon curry
1 clove chopped garlic
3 teaspoons ginger
Dash of salt
Mix well in blender
and enjoy!

Sauce-
2 Cups yellow bell pepper
2 Tablespoons lemon 1. Blend in food processor
juice until smooth, pour over

2 Tablespoon cumin 2 chopped carrots (thinly

2 Tablespoons raisins chopped zucchini, and
soaked for 1 hour purple cabbage
2 Tablespoons grated or
sliced ginger
Chocolate Macaroons
3 Cups coconut flakes
1 Tablespoon vanilla
11/2 Cups cacao nibs
(ground into powder)
Dash of salt
1 Cup agave
1/3 Cup coconut butter

1. Stir ingredients
together in mixing bowl
and refrigerate for 1-2
hours
2. Form mixture into
balls 1 in. apart on
dehydrating tray and
dehydrate at 115 degrees
for 24 hours
Tabouli Zucchini Hummus
1 Cup soaked bulgar (1 1 zucchini, peeled and
hour) chopped
1 Cup chopped parsley 3 Tablespoons raw tahini
¼ Cup green onion, 2-3 Tablespoons lemon
chopped juice
1 deseeded and chopped ½ teaspoon crushed
tomato garlic ( 1 clove )
½ to 1 diced cucumber ¼ teaspoon cumin
3 Tablespoons white ½ teaspoon paprika
balsamic vinegar ½ teaspoon salt
2 Tablespoons Olive oil
1 ½ Tablespoon lemon 1. Process all
juice ingredients until smooth.
salt and pepper to taste 2. Add to taste.
1. Combine all
ingredients.
