    Clarified Lemon Juice Concentrate is processed and clarified from quality lemons to retain
    the characteristic flavor of the whole fruit. All shipments will meet the following specifications.

    Brix 44 minimum acid corrected. Product sold based on acid content

    Wt/gal 9.983 lb/gal minimum

    pH 3.0 maximum

    Titratable Acidity
    395 to 405 grams per liter as anhydrous citric acid.

    Clarity 95% minimum T at 625nm at 4.5º

    Color 0.32 maximum absorbance at 430nm at 4.5º
