MUSHROOM MASALA

Ingredients:
2 onion (pyaj) cut
1/2 kg mushrooms (goochi)
1 tsp garlic paste
salt (namak) to taste
1 tomato (tamatar) cut
1/2 tsp red chilli (lal mirch) powder
3 tblsp oil
1/2 tsp garam masala
1 tblsp fresh corriander, cut
1/2 tsp turmeric (haldi) powder

How to make mushroom masala:

• Cut mushrooms in slices.


• Heat oil and fry onions until golden brown in colour.
• Add garlic paste and cut tomatoes.
• Put chilli powder, turmeric, garam masala and salt.
• Saute for 3-4 minutes or until it starts leaving oil.
• Add mushrooms and mix well.
• Simmer and stir fry till mushrooms are tender.
• Add very little water, if necessary.
• Serve decorated with coriander.

MUSHROOM FRY

Ingredients
10 mushrooms-cleaned ,sliced and boiled in water for a min with salt
1 tsp chilli powder
1/2 tsp garam masala powder
1/4 tsp turmeric powder
1 tsp cumin seeds
1 tsp salt
2 tsp refined oil(for shallow frying)

Directions

Boil water in a bowl,add salt and put the mushroom slices for a min. Take them out
and wipe excess water with tissue paper.

Heat 2 tsp oil in a frying pan,saute the mushroom slices for a min .

Add chilli powder,turmeric powder,garam masala powder,cumin seeds and needed


salt and mix well.

Saute for 5 more mins and turn off the flame.

Serve this mushroom fry with rice and sambar or curd and rice.

MUSHROOM PEPPER FRY

Ingredients: Serves 2
8 oz (1/4 kg) sliced mushroom
1/2 onion (medium sized)- finely chopped
1 tablespoon tomato
1 green chilly (serrano pepper)- cut lengthwise
2 garlic cloves (minced)
1 tsp grated ginger
1/4 tsp turmeric powder
2 tsp pepper powder
1 tsp coriander powder
Salt to taste

For seasoning:
1 tablespoon olive oil
1/4 tsp mustard seeds
1/4 tsp cumin seeds
1/4 tsp urad dal (skinned and split black gram)- optional
5 curry leaves

Method:

1. Heat water in a bowl, when it comes to a boil, turn off the heat and add the sliced mushrooms.
Let it sit for 5 minutes and drain the water.

2. Heat oil in a pan, add the mustard seeds, cumin seeds, urad dal and curry leaves. When the
mustard pops up, add the onions, ginger and garlic. Saute until the onions are transparent. Stir in
the tomatoes and green chilly, saute till the tomatoes are soft.

3. Season with salt, pepper, coriander powder and turmeric powder. Add the sliced mushrooms
and stir it. Pour 1/4 cup of water and cook till the curry is dry.

4. Garnish with coriander leaves and sprinkle lemon juice before serving.
MUSHROOM CURRY

Ingredients
½ lb. Mushroom(mixed)
1 no. Onion
¼ tsp. Turmeric Powder
2 tbsps. Coriander leaves(chopped)
2 nos. Tomato
Red Chili Powder to taste
Salt to taste

Directions
Wash and slice mushrooms into medium size pieces.

Heat oil, add diced onions and fry until onion turns soft.

Add turmeric, continue frying to another couple of minutes.

Now add chopped tomatoes and mushrooms, cover and cook for 5 minutes.

Take off the cover, add a pinch of Garam masala and continue frying till the water
dries out.

Garnish with finely chopped coriander leaves and Serve with rotis.

MUSHROOM NOODLES

Ingredients

• 3 cups boiled Noodles
• 1 tinned Mushrooms-drained and chopped fine
• 2 boiled chicken pieces(optional)-shredded
• 1 Egg (optional)- scrambled
• little Carrot (julienne)
• little Capsicum (julienne)
• little cabbage (julienne)
• 3 Ginger julienne
• 1/2 tsp Madras curry powder
• 1 tbsp Soy Sauce
• a pinch Ajinomotto
• 1 tsp white pepper powder(fresh)
• 2 tsp green chilli sauce
• 1 tbsp spring onion
• 1 tbsp Vegetable oil
• 1 tsp butter
• 1 tsp grated cheese
• 1 tsp red cabbage soaked in vinegar
• 2 tbsp hot-water
• 1 tsp Salt to taste

Directions
Take a microwave bowl,add oil,butter,mushrooms,shredded
chicken,carrot,cabbage,ginger and green bell pepper juliennes. Microwave this on
high for 2 mins.

Take the bowl out and add madras curry powder,boiled noodles,green chilli sauce,
ajinomoto,soy sauce,salt,white pepper powder,2 tbsp hot-water and spring
onions.Mix this well and microwave this on high for 5 mins.

Garnish this with grated cheese and red cabbage soaked in vinegar and Serve hot.
MUSHROOM LOLLIPOP

Ingredients
• 300 gm mushrooms.
• 1 tbsp crushed peppercorn.

• 1 tsp lime juice.
• 1 tsp garlic paste.
• salt to taste.
• 1 cup crushed cornflakes.
• oil to deep fry.
• FOR THE BATTER
• 1 cup maida.
• ½ cup cornflour.
• 2 chopped green chillies.
• 2 tbsp grated cheese.

Directions
Wash the mushrooms and pat dry.Marinate it with peppercorn,lime juice,garlic paste
and salt for 30 mins.

Spread the cornflakes on a plate and keep aside.

Make a batter of maida,cornflour,green chillies and cheese by adding enough water


and make a smooth paste.

Insert a toothpick through the stem of mushroom.Dip it in the batter and roll it with
cornflakes.

Heat oil in a pan and deep fry the mushroom lollipops till crunchy and golden brown.

Serve it with tomato ketchup.

Mushroom Tikki

Ingredients

• 15 Button Mushroom
• 4 Potatoes (Boiled & mashed)
• 2 tbsp Vegetable oil
• 1 Onion (chopped)
• 3 Green Chilles (finely chopped)
• 1/2 tsp Black pepper
• 2 tbsp Corinder (Cilantro)
• Salt - to taste
• 1 cup Sooji(Semolina/Rava)

Directions

Boil for 3 mins & finely chop the mushrooms.

Heat oil in a kadai & add onion, green chilles, salt, Mushrooms & black pepper. Fry & mix
well for 2 mins.

Add this mixture to mashed potatoes with finely chopped coriander. Mix well & make tikkis of
round or any shape.

Roll them in sooji & shallow fry till golden brown.

Serve hot with ketchup or Mint chutney.

Cauliflower Curry

Ingredients

• 125 g Ghee (or) 2tablespoons Oil


• 750 g Cauliflower, Cut Into Florets
• 300 ml Yogurt
• 2 Big Onions, Finely Chopped
• 2 Garlic Cloves, Crushed
• 4 Bay Leaves
• 300 ml Hot Water
• Salt To Taste

Spices:
• 6 Cloves

• 6 Peppercorns
• 2 Cardamom
• 1 inch Cinnamon Stick
• 1 tsp Coriander Seeds
• 1 tsp Cumin Seeds
• 1 tsp Chilli Powder

Directions

Heat 25 g of ghee or 1/2 tablespoon oil. Add the cauliflower and cook over medium heat for
5mins.

Using a spoon transfer the cauliflower to a bowl and pour the yogurt over the top.

Add the remaining ghee or oil to the pan and heat it, add onions, garlic, salt,bay leaves and
all the spices except chilli powder. Fry until onions are golden and soft, then stir in the chilli
powder.

Return the cauliflower and yogurt to the pan and stir to combine all the ingredients. Cook
over low heat for 10mins.

Pour in the measured hot water and simmer for 25mins or until the cauliflower is tender,
stirring occasionally.

Cauliflower capsicum curry

Ingredients

• 2 cups cauliflower florets


• 2 capsicum chopped
• 2 Onion sliced lengthwise
• 1 tsp tomato puree
• 1/2 tsp jeera
• 1 tsp red chilli powder
• 1/2 tsp dry ginger powder
• 1/2 tsp pepper powder

• 1/4 tsp cardomom powder
• 2 cloves
• 1 tbsp Oil
• salt
• water needed for boiling cauliflower
• 1/2 tsp haldi for cauliflower

Directions
1. Boil cauliflower in water by adding haldi & salt.Cook 3/4th.
2. Drain the water.
3. Heat oil in a kadai and splutter jeera and cloves.
4. Add onion and saute until golden brown and add tomato puree and stir.
5. Add Chopped Capsicum and cook till glazed.
6. Add redchilli powder,,then cauliflower florets & salt.
7. Cook till it is tender.Then add pepper powder,dry ginger powder and cardomom
powder.
8. cook for few minutes so that the spice powders mixes well.
9. Serve hot with chapattis.
Note:u can garnish with coriander and ginger.

Cauliflower-Greenpeas Masala

Very tasty preparation of Gopi-Peas Masala.if u r using dry greenpeas,then soak it


overnight and then use.This dish needs 12 mins microwave-cooking time. Try at
home and drop ur comments.

Ingredients

• 200gm Cauliflower (florets chopped finely)


• 1 cup fresh Green peas, cleaned atleast 5 times
• 1 big onion, chopped fine
• 1 big tomato, chopped fine
• 1 tsp cumin seeds
• 1 tsp mustard seeds
• 1/2 tsp split Urad dhal
• 2 tsp chilli powder

• 1/2 tsp turmeric powder
• 1/2 tsp garam masala or any mutton masala
• 1 tsp ginger-garlic paste
• 1/2 tsp freshly ground pepper powder-optional
• 2 tbsp coconut paste(ground with 1 tsp Saunf,1 small onion and 1 garlic pearl)
• 2 tsp salt
• few curry leaves
• few coriander leaves
• 1 cup water
• 2 tsp refined oil

Directions

Take a microwave bowl and add refined oil,chopped onions,cumin seeds,mustard


seeds,split urad dhal and curry leaves.

Microwave this on high for a min.Take the bowl out.

Add all the other ingredients including 3/4 cup water.Mix all the ingredients well so
that the masala gets evenly spread and Microwave(high) this for 12 mins.

Serve this tasty Gobi-mattar masala with rice and Curd or chapathi or Idli.
