Chapter 1

THE PROBLEM AND ITS BACKGROUND

This chapter of the paper present the problem and its

background. It includes the background of the study, the

conceptual framework, the statement of the problem, the

research hypothesis, significance of the study, scope and

limitation of the study and definition of terms.

Background of the Study

Occasionally ice cream is the food of choice for people

refreshing thirst-quenching, along with people's pursuit of

food flavors, ice cream flavors available in the market can

be described as eight streaky, but taste good, nutritious and

rich ice cream is relatively rare, in the present invention

provide a nutritious and delicious bitter gourd ice cream, to

bring touch of cool summer while detoxification, heat and

other effects. A bitter ice cream, characterized in that the

material is bitter, milk, honey, flour, butter, water. Bitter

gourd comes in a variety of shapes and sizes. The cultivar

common in China is 20–30 cm (7.9–11.8 in) long, oblong with

bluntly tapering ends and pale green in color, with a gently

undulating, warty surface. The bitter melon more typical of

India has a narrower shape with pointed ends, and a surface

covered with jagged, triangular "teeth" and ridges.

individually as stuffed vegetables. Nutrition

Bitter melon also known as bitter gourd or Momordica

charantia is a tropical vine that belongs to the gourd family

and is closely related to zucchini, squash, pumpkin, and

cucumber. It’s cultivated around the world for its edible

fruit, which is considered a staple in many types of Asian

cuisine. In addition to its sharp flavor and distinct

appearance, bitter gourd has been associated with several

impressive health benefits.

Bitter melon is a great source of several key nutrients.

Especially rich in vitamin C, an important micronutrient

involved in disease prevention, bone formation, and wound

healing. It’s also high in vitamin A, a fat-soluble vitamin

that promotes skin health and proper vision. It provides

folate, which is essential for growth and development, as

well as smaller amounts of potassium, zinc, and iron. Bitter

Gourd is a good source of catechin, gallic acid, epicatechin,

and chlorogenic acid, too powerful antioxidant compounds that

can help protect your cells against damage. Plus, it’s low in

calories yet high in fiber fulfilling approximately 8% of

your daily fiber needs in a single one-cup (94-gram) serving.

Nowadays people love to experience different kinds of

desserts. Yet, conscious about their physique and healthy

lifestyle. This study focuses to the people who are not fan

of bitter food such as bitter gourd. It aims to have a medium

that will help them to eat without tasting some bitterness.

The Philippine is considered of the diabetes “Hot Spots”

in the Western Pacific Region, where the disease is already

reaching epidemic proportions. In the year 2017 there were

over 3,721,900 cases of diabetes. (Total adult population

60,327,000 Prevalence of diabetes in adult: 62% Total case:

3,721,900). Because of the rising rates of people with

diabetes, the researchers come up a solution that may help

every individual who’s facing with this kind of disease,

Resulted to make an ice cream that made of Ampalaya or Bitter

Gourd to be the major component because it contains many

nutrients that can be beneficial to every individuals body.

It linked to lowering blood sugar, which some studies suggest

means it can aid in diabetes treatment. The ice Cream itself

is not like the other ice cream because it will have a unique

taste that will assure that even you are not in to bitter

food you’ll not hesitate to have a taste because you wouldn’t

taste the bitterness.

Statement of the Problem

This research will determine the Customers Satisfaction

on Bitter gourd Ice cream of G12 ABM students in Samar

National School.

Specifically this study aims to answer the following:

1. What is the profile of the respondents in terms of:

1.1 Age;

1.2 Gender;

1.3 Section.

2. What is the level of satisfaction of customer-

respondents in terms of:

2.1 Taste;

2.2 Texture;

2.3 Aroma;

2.4 Packaging;

2.5 Price.

3. How dominant is the Bitter gourd ice cream to the

customers?

4. How Bitter gourd ice cream help the product innovators

improve their market segment?

Hypothesis/Assumptions of the Study

The following hypothesis will be tested in this study.

Null Hypothesis (Ho) : There is no significance between the

Customers satisfaction of bitter gourd ice cream on other ice

cream flavors.

Alternative Hypothesis (Ha): There is a significance between

the customers satisfaction of bitter gourd ice cream on other

ice cream flavors.

Significance of the Study

Students Bitter ice cream can help the student to eat bitter

gourd without hesitation, and improves blood circulation and

helps to cure issued like cancerous cells in the body.

Teachers The significance of this product is to convince their

students to buy a bitter gourd ice cream to have a healthy

lifestyle.

Parents This can help the parents to assure that their

children will eat bitter gourd without hesitations and

without the taste of bitterness on it.

Scope and Delimitation

This study pertains on the customers satisfactory on

bitter gourd ice cream of the Grade 12 students under the

strand of Accountancy Business and Management in Samar

National School. As cited, this study has an approximately 30

number of students in Samar National School that are selected

randomly. The researcher will have a free taste of the bitter

gourd ice cream, in order for the students to know the taste

of bitter gourd ice cream and be able to answer the following

questions that the researcher made. This study will be a basis

if it is effective way for those who are not in favor of

eating bitter gourd. This will be conducted starting on July

26 until August 10 as of year 2019.

It aims to determine the acceptability of the product

that the researcher invented. The Grade 12 ABM students were

the respondents for sensory evaluation techniques. The

Product were sold through direct selling and orders. The

researcher also accept customers within Samar National School

for those who are willing to purchase our product. The

researchers limited their study on Grade 12 ABM students only

in Samar National School and the suggestions and feedback of

the respondents.

Definition of Terms

For purposes to state well to the readers the significant

term of using this study, to delineate been end define

conceptually.

Students. this term is primarily a person enrolled in a

school or other educational institution who attend classes in

course to attain the appropriate level of mastery (Merriam

Dictionary). Operationally, this are the Grade 12 ABM

students enrolled in Samar National School S. Y. 2019-2020.

Bitter Gourd. this term is the most famous wonder

vegetables. It has been extracted, packed in dietary

pills.(Merriam Dictionary. This is one of the ingredients of

the ice cream that the Grade 12 ABM students taste.

Detoxification. this term is the physiological or

medical removal of toxic substances from living organism,

including the human body, which is mainly carried out by the

liver.(Merriam Dictionary). This is the harmful substances

that are present inside an ingredients.

Chapter 2
REVIEW OF RELATED LITERATURE

This chapter of the paper presents the review or related

literature, the related studies and synthesis of the study.

Related Literature

Bitter Melon, wild bitter gourd, Momordica charantia, or

bitter melon is a tropical vegetable native to Asia. It is

often used in Chinese cooking. Consumption of bitter melon is

capable of lowering blood glucose levels by increasing

hepatic utilization of glucose and decreasing hepatic glucose

output (Kuhn, 2002; Joseph and Jini, 2013). Thus, wild bitter

gourd is commonly used as an herbal remedy to control

diabetes, with or without the concomitant use of prescription

medications.

In the United States, rosiglitazone (Avandia) is a

second-line agent used in the treatment of type 2 diabetes

mellitus (T2DM) (American Diabetes Association, 2015).

Rosiglitazone works by increasing insulin sensitivity at the

muscle by acting as an agonist on peroxisome proliferator-

activated receptor gamma (PPARγ). This increases glucose

uptake and has the secondary effect of decreasing hepatic

glucose output.

Nivitabishekam et al. (2009) demonstrated that

rosiglitazone (2 mg/kg or 5 mg/kg) and bitter melon extract

produced glycemic-lowering effects that surpassed the effects

of monotherapy of either rosiglitazone or bitter melon in

mice. The mechanism by which bitter gourd increases glycemic-

lowering effect is partly thought to be due to an increased

expression of PPARγ when mice were taking bitter gourd

extracts (Chao et al., 2011). Note, however, that the maximum

dose of rosiglitazone in human patients is 8 mg/day regardless

of weight. Pioglitazone (Actos), the current clinically

preferred PPARγ agonist agent, has not yet been studied in

the same way for synergistic activities with bitter melon.

Due to the potential that bitter melon has in decreasing

blood glucose, patients also using hypoglycemic agents such

as insulin, sulfonylureas, and meglitinides should be

cautious due to a theoretical risk for increased hypoglycemic

events.

However, case studies of hypoglycemic events due to

bitter melon use have not been documented in the literature.

Note to health care professionals: The use of bitter melon

with insulin, sulfonylureas, or meglitinides should be

cautioned for theoretical risk of increased hypoglycemic

events in the pharmacotherapeutic management of type 2

diabetes.

Bitter Melon (Momordica Charantia) is a long, slender

vine, with long-stalked leaves and very bitter fruit, grown

in tropical and subtropical areas of Asia, South America,

Africa, and the Caribbean. The fruit has been used as a food

and medicine. Parts of the fruit have been used as an

antibacterial agent, hypoglycemic agent, and to treat high

lipid levels.

Animal studies report that the active ingredient

charantin (steroidal saponins) can decrease gluconeogenesis,

increase glucose metabolism and tolerance, increase the

number of β-cells, leading to a reduction in blood glucose

level and increased concentration of plasma insulin.6,7

Proposed mechanisms of action include activation of the AMP-

activated protein kinase system,5 expression of the

peroxisome proliferator-activated receptors α and gamma

(PPARα and PPARgamma) which may mitigate insulin resistance8

and a protein extract that exerted both insulin secretagogue

and insulin-mimetic activities.9

A 2010 Cochrane review10 of clinical evidence found

three randomized clinical trials (RCTs) of up to 3 months’

duration and investigating 350 participants that met their

inclusion criteria. Two RCTs compared the effect of

preparations from different parts of the Momordica charantia

plants and placebo on the glycemic control in type 2 diabetes

(T2DM). There was no statistically significant difference

compared to placebo.

In contrast, the effects of the preparation from the

leaves of the plant and glibenclamide were comparable in the

third study. Several small controlled trials and case series

with small numbers of subjects (eight to 100) reported

statistical improvement in blood glucose levels.11 The

largest trial was a 2-day study of 100 subjects with T2DM

given bitter melon extract 1 h before an oral glucose

tolerance test (OGTT); the patients’ mean fasting glucose

level and 2-h blood glucose level were significantly

different from those of the previous day (p < 0.001).6

Bitter melon is offered in different forms. For the

encapsulated extract, the suggested dose is 100–200 mg three

times daily. For the liquid form, the dosage is 50–100 ml/day

and for the dry powder, 3–15 g daily has been given.

Bitter melon is generally safe. Side effects include

abdominal discomfort, pain, and diarrhea. Caution should be

used to avoid potential interaction with hypoglycemic drugs.

Two case reports of hypoglycemic coma in children have been

described.12

Bitter gourd (BG; Momordica charantia) is a common

tropical vegetable which was shown to modulate blood glucose

homeostasis. In this paper, we reviewed studies on BG's

efficacy and safety for glucose homeostasis. Numerous studies

demonstrated that BG or its extract administered orally

lowered serum glucose in diabetic rodents, and in obese

rodents fed a high fat diet or with a genetic defect. The

mechanisms involved include inhibiting intestinal a-

glucosidase and glucose transport, protecting islet β-cells,

enhancing insulin secretion, increasing hepatic glucose

disposal, decreasing gluconeogenesis, and improving insulin

resistance.

Other studies demonstrated that BG extracts can activate

and upregulate the expressions of peroxisome proliferator-

activated receptors (PPARs). Quite a few triterpenoid

glycosides and aglycones were identified as active compounds.

A moderate hypoglycemic effect was observed in some clinical

trials. Reported adverse effects of BG are modest, including

hypoglycemic coma in two children taking BG before breakfast,

a favism-like syndrome caused by vicine in BG seeds,

gastrointestinal discomfort especially abdominal pain and

diarrhea in human trials, reduced fertility in mice, and

increased serum γ-glutamyltransferase and alkaline

phosphatase levels in animals. Currently, the efficacy of BG

as a hypoglycemic therapeutic agent has not been

substantiated based on evidence-based medicine, mainly

because BG preparations and doses have not been standardized,

and an inadequate number of subjects has been tested. Existing

data, however, support the potential worth of further

research and development of BG as a functional food for

glucose homeostasis. Adequately powered, randomized, placebo-

controlled trials with standardized BG preparations and

appropriate subjects are especially needed.

Bitter gourd (Momordica charantia Linn.) is widely

regarded as one of the best remedy foods for diabetes. The

positive effect of bitter gourd on diabetes has been

attributed in part to the remarkable free radical scavenging

activity of its boiled water extract from sun-dried fruits.

It is well known that a heat process significantly influences

the antioxidant activity of fresh fruits. However, the heat

drying processes of bitter gourd have not been studied so

far. Here, we show that the free radical scavenging capability

of bitter gourd extract significantly increases after the

heat drying process, while the content of flavonoids and

phenols, which are generally regarded as the main antioxidant

components in bitter gourd, remain unaffected. Furthermore,

the content of free amino acids and the total reducing sugar

were found to decrease with increasing browning index,

indicating the progression of the Maillard reaction, products

of which are known to possess significant antioxidant

activity.

Therefore, it suggests that Maillard reaction products

may be the main contributors to the increase in antioxidant

capability. Finally, the bitter gourd extract with the higher

antioxidant activity, was shown to manifest a corresponding

higher proliferation activity on NIT-1 beta-cells. These

results suggest that controllable conditions in the heat-

drying processing of fresh bitter gourd fruit is of

significance for enhancing the total free radical scavenging

capacity, beta-cell proliferation activity and possibly the

anti-diabetic activity of this fruit.

Diabetes, obesity, and metabolic syndrome are becoming

epidemic both in developed and developing countries in recent

years. Complementary and alternative medicines have been used

since ancient era for the treatment of diabetes and

cardiovascular diseases. Bitter melon is widely used as

vegetables in daily food in Bangladesh and several other

countries in Asia. The fruits extract of bitter melon showed

strong antioxidant and hypoglycemic activities in

experimental condition both in vivo and in vitro. Recent

scientific evaluation of this plant extracts also showed

potential therapeutic benefit in diabetes and obesity related

metabolic dysfunction in experimental animals and clinical

studies.

These beneficial effects are mediated probably by

inducing lipid and fat metabolizing gene expression and

increasing the function of AMPK and PPARs, and so forth. This

review will thus focus on the recent findings on beneficial

effect of Momordica charantia extracts on metabolic syndrome

and discuss its potential mechanism of actions.

Synthesis of the Study

The previous study was similar to the present study in

as much as they bought focused on Customer Satisfaction in

Bitter Gourd Ice Cream. However, they differed because the

previous study used qualitative method research while this

present study use experimental research method.

The related literature and study, findings on beneficial

effect of bitter gourd that used to treat diabetes and

cardiovascular diseases since ancient era. Due to the

potential that the bitter gourd has in decreasing of blood

sugar or glucose.

Although the previous study cited differed in terms of their

nature, scope, and research methodology used, however it

cited here as they provided insights into the conducted study.

Chapter 3

METHODOLOGY

This chapter includes the research design, the research

sample and sampling procedure, the research instruments, the

data gathering procedure and plans for data analysis.

Research Design

The research study uses the combination of quantitative

analysis and experimental method to determine the making of

bitter gourd ice cream. The researcher focuses mainly on the

basic research process to gather data and information for the

study.

Research Sampling Design

The sample of this study composed of Grade 12 Students

of Accountancy Business and Management. This study used the

purposive sampling techniques. The purpose of this study is

to find out the Costume Satisfaction on Bitter Gourd Ice

Cream. We as a Researcher conducted a survey to ABM students

in Samar National School.

respondents Second, the level of satisfaction of customer

satisfaction Third, How dominant is the Bitter gourd ice cream

to the customers Fourth, How Bitter gourd ice cream help the

product innovators improve their market segment. The

questionnaire is formulated based on the Statement of the

Problem a Comprehension review of related literature and

studies.

Data Gathering Procedure

The researcher conducted a survey from the ABM students

upon the validation of the questionnaire. To ensure high

recovery rate, the researcher personally distribute the

survey to the respondents. The respondents were briefed as to

the purpose of the study and were guided accordingly for the

satisfaction of bitter gourd ice cream.

Research Instruments

This study used Questionnaire especially designed for

the respondents. The Questionnaire consist 4 questions

designed to gather the following information: First, Profile

of the respondents. Second, the level of satisfaction of

customer satisfaction Third, How dominant is the Bitter gourd

ice cream to the customers Fourth, How Bitter gourd ice cream

help the product innovators improve their market segment. The

questionnaire is formulated based on the Statement of the

Problem a Comprehension review of related literature and

studies.

Methods and Methods Employed

 How to make Bitter Gourd Ice cream?

Ingredients:

 2 Bitter Gourd

 350 grams of Condense

 250ml fresh milk

 2 Nestle Cream

 3 Egg

 1/8 Sugar

 Aluminum Foil

PROCEDURE:

Step 1: To start the procedure of making the bitter gourd

ice cream, first prepare all the utensils and ingredients

needed in making the bitter gourd ice cream.

Step 2:Wash the bitter gourd and stripe/cut it into small

pieces so it won’t be bitter. And prepare the other

ingredients.

Step 3: After cutting it start boiling the bitter gourd

for almost 20 minutes, after 20 minutes strain the bitter

gourd to remove its excess water.

Step 4: Put the bitter gourd inside the blender including

all purpose cream and mix it well till you are satisfied with

a texture.

Step 5: After mixing the two ingredients add also the

condense milk mx it will for the better texture.

Step 6: After 20 minutes of mixing, ready the container/

Tupperware to transfer it. When already fill the Tupperware

of the mixed ingredients, cover it with foil and secure it

with it led.

Step 7: Put it in the fridge for 12 hours, every 3 hours

mix it for a better result.

CHAPTER 4

PRESENTATION, ANALYSIS AND INTERPRETATION

This chapter presents the data analysis, results and

findings, and the discussion. In reporting the results, the

researchers stays close to the statistical findings without

drawing broader implications or meaning from them. Further,

this section includes all the summaries of the data rather

than the raw data. A result section include tables and

detailed explanations about the statistical results.

Data Analysis

The researcher gathered the personal information of the

respondents in terms of gender, grade and section and

Customer Satisfaction on Bitter Gourd Ice cream.

To sum up the result of the survey, the researchers tally

the responses of the respondents in each question to see the

number of respondents who answered for each scale such as

very unsatisfied, unsatisfied, undecided, satisfied, very

satisfied and for table 2 who answered for each scale such as

strongly dis agree, disagree, uncertain, agree, strongly

agree and for the last table who answered for each scale such

as excellent, very good, good, average, poor

In table 1 question number 1, with a weighted mean of

3.5 shows that majority of them are satisfied with the taste

of bitter gourd ice cream.

In question number 2, with a weighted mean of 3.7 shows

that majority of them are satisfied with the aroma of bitter

gourd ice cream.

In question number 3, with a weighted mean of 3.4 shows

that majority of them are Undecided with the texture of bitter

gourd ice cream.

In question number 4, with a weighted mean of 3.7 shows

that majority of them are satisfied of the over all appearance

of bitter gourd ice cream.

In question number 5, with a weighted mean of 2.9 shows

that majority of them are undecided of the pricing of bitter

gourd ice cream.

In question number 1, with a weighted mean of 2.5 shows

that majority of them are undecided that bitter gourd ice

cream is harmful to the body.

In question number 2, with a weighted mean of 3.2 shows

that the majority of them are undecided that bitter gourd ice

cream can help you to maintain your health.

In question number 3, with a weighted mean of 2.4 shows

that majority of them are undecided that bitter gourd ice

cream can cause diseases.

In question number 4, with a weighted mean of 2.9 shows

that majority of them are undecided that bitter gourd ice

cream suit to their taste.

In question number 5, with a weighted mean of 3.1 shows

that majority of them are undecided that bitter gourd ice

cream gives a relaxing feeling.

Discussion:

This research conducted through questionnaires consist

of 30 respondents from Samar National School of ABM with 16

male and 14 female and there are 50% of ABM A and 50% of ABM

B. (20%) of the respondents are satisfied when it comes to

the taste of the bitter gourd ice cream while the other 20%

are satisfied regarding to the aroma of the bitter gourd ice

cream because of its distinctive pleasant smell that surely

attracts for them to have a taste.

Some of the respondents who answers the questionnaire

are also contented about the texture that made an outcome of

20% of tally. Concerning with the pricing the

 The data shows that we need to innovate it more and

to improve the bitter gourd ice cream so the

customer will be satisfied.

 Respondents are undecided since some of them aren’t

able to purchase the product and considering if the

ice cream is worth it for the price the was sits

while the other are in favor because they think

that our product is worth it for the price because

it is beneficial to our health.

CHAPTER 5

SUMMARY, CONCLUSION AND RECOMMENDATIONS

This chapter of the study presents the summary,

conclusions, and recommendations of the study. The

researchers states the summary of findings, draw conclusions

and formulate recommendations to apply the results or for

further research for the future researchers.

SUMMARY OF FINDINGS

This study was carried out to determine the customers

satisfaction on bitter gourd ice cream of Grade 12 ABM

students Samar National School. This study was conducted

among the 15 students of Grade 12 ABM section (A) and (B)

students of Samar National School. The researchers distribute

a questionnaire to gather all the information needed.

 The researchers found out that most of the students

undecided in terms if the taste, aroma, texture,

over all appearance and the pricing of bitter gourd

ice cream.

CONCLUSION

This study focused the Customer Satisfaction on Bitter

Gourd Ice Cream of Grade 12 ABM Students in Samar National

School . Aside from this, the researcher also focused on the

specific questions of the study. This doesn’t also limit ways

to enhance choice, but also provide on How Bitter Gourd can

affect the health of the students.

After the through processing, and analyzing of the data

done by the researchers, the researcher concluded that some

of the students are satisfied with the taste, aroma, over all

appearance and pricing and there are some students are

undecided with the texture. Out of 30 students their are 19

students that rated our product “Good”

Recommendations

The researcher would like to recommend her study to the

community for aside it is not expensive it also nutritious ,

the researcher also want to have further study about this

research. Bitter guard ice cream its important to consider

the nutrients ice cream for the students , parents and future

researcher

To the Students – to ensure their potential and develop their

skill in the food industry. They will gain knowledge from

this study including the health benefits of the product.

To the Parents - to pass or exchange knowledge with their

children regarding their experience in manufacturing or in

making the cream

To the Teachers – to let them be aware of the needs of their

students through a more effective system of engagement.

To the researchers - this research provides data and

information that can help the researchers come up with

conclusion about the taste and health benefits of the ice

cream. The researchers will get deep into the topic and they

will gain knowledge from it. They will be able to provide the

best of the solution to some issues like financial problem,

trial and error in making the ice cream, etc.

To the future researchers - this study is important to them

for the reason that it can contribute to their knowledge and

progress on the said study and also as an aid to their future

studies especially in making ice cream with some health

benefits.

To the Readers – this study will give them the needed

information to conduct or in making their own ice cream.

The research study resulted into a good and satisfaction

results. The researcher recommends further extended studies

on improving the soften or to make sure to balance the

bitterness and sweetness of the bitter gourd ice cream,

furthermore ,additional reading and information’s about the

study is highly appreciated.
